This Treat is No Trick

I used to make these Pinwheels for my kids when they were in elementary school.  The recipe is pretty easy and quite versatile.  By that I mean, you can flavor and add color to both layers.  Example: add cinnamon or almond flavoring to the chocolate dough and add peppermint flavoring and pink food coloring to the white one.  Can you imagine eating a purple and green spiral cookie on somebody’s birthday?  Or how about a black and orange cookie on Halloween? 

And just before you put them in the oven, you can also top them with sprinkles, candy shapes, or just plain sugar.  Use your imagination to make the most interesting of cookies for any holiday or celebration, because experimenting is part of the fun with this dough.

¾ cup of softened butter
1 cup of white sugar
1 large egg
2 teaspoons of vanilla
2 ½ cups of all-purpose flour
½ teaspoon of baking powder
cocoa powder, peanut butter or Nutella - optional
rainbow sprinkles or candy shapes - optional
5 drops of food coloring - red, yellow, pink, orange, black - optional
1 teaspoon of cinnamon, almond, or nutmeg - optional
3 or 4 drops of flavoring - peppermint, lemon, etc. - optional

Preheat oven to 375° F.

Lay parchment paper on 2 large cookie sheets or grease well.  

In large bowl, beat butter with sugar until fluffy.  Then beat in the egg and vanilla.

In a separate bowl, whisk flour with baking powder. Add to butter mixture in 2 additions, stirring until it becomes a soft dough.

Divide dough in half.  Add cocoa powder (and/or cinnamon, peanut butter, Nutella, or mint flavoring).  Mix and set aside.  Now move to the other ball of dough.  Leave this white and add mint or a cinnamon flavoring or any flavoring you like and coloring. Remember - both the colors and flavors should go together well.
 

Roll each ball out flat, and then place one on top of the other.  Take one end and slowly roll this up into a log.  Length-wise or width-wise determines how large your cookies will be. 

Once you’ve completed rolling the dough, wrap it in plastic and place in the refrigerator until chilled.  This could take up to 2 hours, but you can leave it in the fridge for up to 3 days. 

When you’re ready to bake, take the log out and remove the plastic covering.  Beginning at one end, slice the cookies about ¼” thick and place them on the prepared cookie sheets.  

Bake for about 10 minutes – you want them to be a lovely golden brown.  Let cool and serve. 

**HINT - using a piece of thread instead of a knife, makes it easier to cut the dough.

FRESH from TINA GRIFFITH

When buying corn, check to make sure the ears are not rotten on the ends. You can certainly buy it and cut that part off, but I try to select ears as fresh and clean as possible.

After shedding the leaves and 'soft hair', drop corn in boiling water until it’s golden yellow.


Remove ears from pot and then rinse under cold water to cool them down.

Stand ears on end and carefully slice kernels off the cob. Once you've tasted fresh corn like this, you'll never buy frozen or canned store-bought corn again.

I put the shaved corn from two or three cobs into each baggie, which is approximately a measured cup. This is perfectly portioned for my husband and myself.

These bags must be placed into freezer bags so the corn doesn’t get freezer burn. Two sandwich bags fit well into one medium sized freezer bag.

Squeeze out as much air as possible without crushing the corn. Place bags into your freezer. When you're ready to prepare dinner, empty the baggy into a pot of boiling water. Heat just long enough for the kernels to get warm. I drain them and add garlic butter or regular butter before serving, but you can eat them with just salt and margarine.

Here’s an interesting fact about the corn cobs;

After you shave the kernels off, you can put the cobs into freezer bags and keep them for when you make soups.

Get your big pot out and add the left-over stems from broccoli and the discarded cobs of corn into the water. This will not only add flavor to whatever you're making, but it will add some much-needed nutrition.

FROM GARDEN to FREEZER

The season for fruits and vegetables to go into jars, cans, or the freezer, is almost upon us. This is what I do with fresh carrots. The method is easy and the carrots are tasty! I'm sure you'll like them.

Tina’s Tasty Carrots

1 lb. carrots, scrapped and trimmed
2 gloves garlic, diced
8 tbsp. butter, cut into pieces
2 – 3 tbsp. dried cilantro*

Cut carrots in half if long and wash them under cool water. Drop them into a pot of water, cover, and bring the pot to a boil. Boil 5 minutes, this is called parboiling. Works great with all root vegetables.



Warm garlic, butter, and cilantro in a frying pan on medium heat. *I use cilantro because my husband is from Costa Rica, but you can use Italian or regular parsley if that's better for you.

Add carrots. Allow them to simmer for a minute or two on each side, and then remove them to a cool dish. Be sure to scrape all the sauce over them.



After they are room temperature, I add them into medium-size freezer bags, making sure they lay flat. I also make sure to put two servings into each bag - one for my husband and one for me.

I want to stress the fact that the carrots need to lay flat when you put them into the freezer baggies. This helps them to get to the same temperature at the same time. Maybe it doesn't matter to everyone, but I have OCD and it's important for food safety.


The day you want to use the carrots, remove them from the plastic bag and place them into an ovenproof dish. Turn the oven on 350° F, and then prepare the rest of your meal. When dinner is ready to serve, so are your carrots.
