CHRISTMAS DRESSING

This year seems to have zipped by much too fast. Our family is already hinting for me to cook their favorite dishes for Christmas dinner. One wants a ham with gravy from drippings. Another is pleading for green bean casserole, while another wants fresh asparagus spears and dinner rolls. Me, I have a sweet tooth and am looking forward to a home baked apple pie, of course ala mode, for dessert. 😊 One thing the entire family is looking forward to is my special dressing. Here’s the recipe for you.

CRAISIN-WALNUT DRESSING

1 bag seasoned breadcrumbs, or mixed breadcrumbs
1½ cup chicken stock, just enough to moisten breadcrumbs
2 tbsp. butter1 onion, chopped
¼ cup celery, chopped
⅓ cup dried craisons, dried cranberries or raisins
¼ cup chopped walnuts
Salt & pepper to taste 

Preheat oven 350° F. 

Soak craisins, or raisins, in warm water to soften for fifteen minutes. 

Melt butter in a frying pan. Sauté celery and onion until opaque, about 7 minutes.

Drain craisins. Combine all ingredients in a medium size bowl, then season with salt and pepper.  Pour chicken stock to moisten ingredients and mix lightly.

Grease an oven safe pan them scoop in mixture.

Bake 25 – 30 minutes.

FRUITS OF THE HARVEST

Inside Greenhouse Three there are vigorously growing hanging nursery pots of tomatoes. These are cherry tomatoes and they come in red or yellow. Medium-sized, these fruits of the vines are just ripe for popping into you mouth without a smidgeon of preparation. Don’t ask me how I know; I’ll never tell.

Hanging Baskets of Tumbling Toms go out of the greenhouse for sale around the first of May and disappear quickly. They may need to be brought in at night, but they are already in bloom with some tiny tomatoes showing. It’s a way to get a jump start on the season for a delicious tomato taste.

Lately I’ve learned to use them in several different ways that liven up a quickly thrown together summer meal. Below are a few ideas. You’ll spin off into your own vivid imagination, I’m certain, adding salads and main dishes. This is quick and easy fixing that leaves plenty of time to enjoy the sunshine outside.

Party Picks   Crackers of Choice

There are tons of choices for the bottom of your snack which will wind up being topped by half a cherry tomato. I like plain old saltine, but I do experiment with any and all of the offerings. I need to mention that a homemade loaf of bread makes a fantastic "cracker" cut into small squares. Also, just plain toast cut into squares works well.

Next the Spread

These are just a few of the spreads I’ve used:

(1) Canned potted ham (or a chicken spread) mixed with mayo or a touch of mustard. Occasionally I use a pear relish mixed in that is delish. Mix and spread on your crackers lightly. Don’t glob or your cracker will collapse. Still taste good, but not esthetically attractive so soggy.

(2) I’m mad for the whipped cream cheese. ‘Nuff said about that. It’s pretty simple to spread on your crackers. You can add any old spice that strikes you as interesting. I’ve used Season all Salt, cinnamon, Italian seasoning or just a piece of fresh basil. All good. If you use the basil leaf, add a swipe of creamed cheese to glue it to the cracker else it’ll slide right off. 

(3) I’m wild for ricotta cheese, but hubby isn’t so we get to ‘decorate’ our crackers individually.   

Meat? 

Here I use whatever I’ve got in the kitchen. Sliced ham bits are lovely, a sprinkle of the sausage you had for breakfast is great, a bit of corned beef (just a bit because it’s strong), another cheese either cut to fit the cracker or shredded and sprinkled over. Like the crackers, cheeses come in a great assortment chosen to taste.

You’ll find your own preferences for thickness. Slice the cherry tomato in half or into four slices and top your masterpiece. Use a bit of spread to stick it if toppings tend to slide.  

Now is the delicate operation that remains a mystery you might keep to yourself. A very small dot of “Zesty Italian Salad Dressing. Shake first and I promise you, you must use only a very small dot on top the tomato. Voila! You are fini

Fatigue and the effects of the brandy on top of the ale now gave his gait a distinct wobble. He chuckled, amused at his condition.

As he reached for the portrait of great Uncle Barney, he lurched into the back of the red leather sofa in front of the cosy fire. “Deuce take it,” he exclaimed when a rounded arm rolled into view. He spotted the gentle curve of a hip and walked around to the front, where he spied a tumbled haze of dark curls hiding a face. It is indeed a female—a sleeping female.

Who was she? The gown was too rich for his household staff. Curious, he knelt beside the sofa.
“Only one way to find out,” he whispered and moved one dark curl. He sat back, satisfied when a handsome face swam into view. She sighed and rolled over, revealing a generous figure and a pair of rosy lips. She might be Sleeping Beauty—but not one of my relatives. He leaned over and kissed those tempting lips.

As he lingered there, she sighed and came partially awake. He could not resist. He deepened the kiss and sounds of satisfaction like yum and umm came from those delicious lips. Her hand stroked his face, then reached around his head to pull him closer. Delighted with this turn of events, the Duke of Westerton complied enthusiastically and extended an arm around a slender waist. How much of the ale and brandy had he imbibed? Dizziness overcame his senses as he slid down on the floor and knew no more.

A SELF-REGULATING DESSERT!

This quick and easy treat is a huge success with my family and I'm confident it will be with yours, too.

IMPOSSIBLE PIE
4 eggs
½ cup butter
2 cups milk
½ cup plain flour
1 cup sugar
1 cup coconut
2 tsp. vanilla essence (extract)

Preheat oven to 350° F.

Blend all ingredients together in a food mixer.

Pour the mixture into a 10" (or similar) greased pie dish. Bake for one hour or until the centre is firm.

The flour forms the crust; the coconut forms the topping and the center is egg custard, creating a delicious dessert!

Sit back with a slice of your tasty pie and take a peek at my latest Regency Romance.

She clasped her penknife tightly in her free hand and hid it beneath her skirts. The dead eyes swivelled from Kit’s hemp binding, now lying on the floor, to Juliana’s face where she hovered protectively in front of Kit.

‘What a clever young lady,’ the revolting animal purred. At the menace in his voice, Juliana felt as though a snake had slithered up her spine. She stood up and held out her ungloved left hand to show him how she had untied the ropes. Dead-Eyes was too wary to come any closer, and she knew he couldn’t see in the dimness that the knots had been sliced through.

The pale eyebrows rose. ‘Perhaps those dexterous fingers can be put to better use. Come here.’ He crooked a long, thin forefinger and the muscles at the bottom of Juliana’s stomach jolted.

Hold yourself together, Juliana. Your plan relies on your being as close to him as possible.

Slowly she sidled towards the creature and for the first time she saw signs of life in the cold eyes.

‘I always interview our new young ladies before they are thrust on our clients,’ he purred thickly. ‘I like to … warm them up, so to speak.’

Bile rose in her throat. She had never seen an iceberg but she had heard about them, and she had the distinct impression that a huge chunk of iceberg had just washed into the room. ‘Warm them up?’ She didn’t think so. Please, please, please God, don’t let him have touched Tilly.

Clutching the penknife in the palm of her right hand, she shuffled closer to him, measuring the distance carefully and also his height. Yes, he was tall. So was she. Flexing her body, she moved closer, as if in a trance. His arm shot out and grabbed her.

‘No!’ Kit yelled behind her.

‘Stay back, Kit,’ she warned.

‘That’s right, my dear. You understand. You want to be tutored by Benny Ames, don’t you?’ He tugged her flush against his body. Struggling not to recoil, she saw he was sweating. His tongue slid
greedily over his yellowed teeth and he clasped her left hand like a lover. She kept her right hand hidden in her skirts. Ames’s breathing deepened as he tried to rub her left hand over his erection. Even as she struck, he was so lost in a haze of sexual pleasure he had no idea what had happened.

‘Hurry, Kit. Run!’ she yelled

This time she was prepared for the blood. It spurted out of his throat in a great arc, dousing the holland covers beside them. Juliana ducked backwards holding the slippery knife handle. The knife blade was buried in Ames’s neck. He clutched his throat, his eyes wide with stupefaction.

Juliana’s stomach lurched and she dropped the handle. As Ames made the most fearsome gurgling sounds, she edged around his flailing body and raced to the door. She hurtled down the stairs and cannoned into Kit. ‘Hurry, Kit. Hurry. Get out of here.’ She shoved the front door open and pushed him outside.

Kit slanted a glance back over his shoulder as his little legs sped along. ‘Where are we going?’

‘To the Rosemary Lane Inn. Hurry!’

‘But I don’t know where it is!’ He kept on running all the same, tugging Juliana along by the hand.
Juliana cast a quick glance behind them. The blue door with number 32 painted on it still stood innocently ajar and she could hear no sounds of pursuit.

‘Run towards the traffic noise,’ she gasped.

A few people glanced at them as they rushed by, but nobody seemed interested in a scruffy boy and a bloodstained, disheveled young woman running helter skelter up the alleyways. No doubt it was a common sight in these parts.

As they stumbled from the dank alleyway into a wider street she saw a sign stuck on a building façade that said ‘Chamber Street’. The steady throbbing of her sore, bruised feet echoed the drumming in her head. Swaying, she knew she was nearly done for.

Kit glanced back and tugged her hand. ‘Come on, miss,’ he encouraged her, then he raised their clasped hands and stared at the red stains on Juliana’s fingers. ‘Thank you,’ was all he said.

Breathless, she gulped and said nothing, fighting her queasy stomach. Soon it would happen – the reaction. Last time she had shaken as if with the ague for several hours. And when she had finally found herself safe, she had huddled into a ball and cried and cried and cried. She had cried for her mother and for herself, and for all the other women who had been held in the power of men who did not deserve them.

But now was not the time for self-indulgence. She must protect Kit. She lifted her chin and plodded on.

Footsteps pounded behind them. Twisting around, she shoved Kit out of the way...

APPLES, APPLES, APPLES

Such a gorgeous fruit. Fruit bowl on the dining room table lends a nice fragrance to the room; apple bobbing and caramel apples are for Halloween. Did you mom ever make fresh apple sauce? Nothing like the stuff they sell in the grocery store, is it? At my little Herbtique Shoppe here in Western NY, we sell Gourmet Chunky Rum Apple Sauce. The recipe is a state secret, but here are some hints to make the most of this delicious fruit.

Select both soft and firm apples, ie Courtland is soft, Greenings are firm. One will cook down first leaving the other 'chunky'. Stir frequently. Burned apples are not delicious and the soft ones cook rapidly.

To peel or not to peel: We leave the peel on at home. Commercially we don't. Both are good. Taste before you add sugar. Most times it isn’t necessary.

Blend flavors: Buy as many different kinds of apples as you can. Not only is this tasty, but it's way fun as well. As you peel, take a bite now and then to compare flavors.

Flavorings: You are probably familiar with cinnamon to taste. A very small dash of nutmeg and cloves is good too. Vanilla is a winner. One cap and then taste. Other flavorings are great too-here is a good place to experiment. Let your eye roam over the choices at the grocery store. My son swears root beer would be great; he could be right. Be careful with maple syrup; it gets too sweet fast.

Baked apples are wonderful when you use a touch of flavoring with your brown sugar—vanilla is one of my favorites but you might find others.

Regarding the RUM: If you are making apple sauce, add at the last minute with whatever flavoring you have chosen. It gives it a sort of butter taste. I am about to experiment with BRANDY. You might try it too.

A neighbor just hinted to me that apple added to salsa is good. Can't wait to try.

Canning apple sauce takes expert knowledge. Please do not try it if you haven't done quite a bit of reading. PH is a biggie. We use lemon juice and a ph meter.

Enjoy the apple harvest. There are so many ways and I didn't even mention: apple pie, apples and cheese, cocktail apples, home dried apples, apple pan dowdy, apple crumb cake, apple butter, etc, etc. Dried apples and apple pie are delicious any time.

How Does Your Garden Grow?

Gardens grow of their own volition. You labor with the lay out and lovingly place the plants. By the third year, your garden has selected what it will and will not accept. But it’s gorgeous, healthy and you wouldn’t change a single thing. (Okay, maybe you’ll move that fragrant dianthus in front of that balloon flower which is taller.) Some of it is your fault because you couldn’t resist that church sale and your neighbor shared several perennials. Status normal. Allow your garden nostalgia. You show it off by saying, “I got that one for next to nothing on sale, Susan Smith gave me that one when she moved to Florida, I miss her so! My mother-in-law finally broke down and shared that rose. Would you believe how she can make cuttings and root them?” This iris came from … and that one came from…

SEASONAL: Do plan spring shrubs/bulbs which are so welcome. Fall red/yellow leaves.

INVASIVE: When someone mentions the plant is invasive, believe it! I love the golden blooms of Rudbeckia Goldstrum, but it will take over if given the chance. Plant it way over there where you can mow it if need be; same with any sort of mint.

PARTNERSHIPS: Delphenium back up to fences almost poetically, a partnership. Peonies are almost small bushes. I love to make a back ground hedge row from them. Yellow coreopsis and red yarrow are made in heaven for hot colors.

FRIENDSHIP: The deer, rabbits, groundhog, the neighbor’s pets, etc have destroyed some of your hard work? This is your opportunity to share and discover new friends. What better way to become acquainted? You’ll learn to laugh and maybe learn new gardening secrets while you commiserate.

GARDENING TIPS

EXCERPT
Fatigue and the effects of the brandy on top of the ale now gave his gait a distinct wobble. He chuckled, amused at his condition.

As he reached for the portrait of great Uncle Barney, he lurched into the back of the red leather sofa in front of the cosy fire. “Deuce take it,” he exclaimed when a rounded arm rolled into view. He spotted the gentle curve of a hip and walked around to the front, where he spied a tumbled haze of dark curls hiding a face. It is indeed a female—a sleeping female.

Who was she? The gown was too rich for his household staff. Curious, he knelt beside the sofa.
“Only one way to find out,” he whispered and moved one dark curl. He sat back, satisfied when a handsome face swam into view. She sighed and rolled over, revealing a generous figure and a pair of rosy lips. She might be Sleeping Beauty—but not one of my relatives. He leaned over and kissed those tempting lips.

As he lingered there, she sighed and came partially awake. He could not resist. He deepened the kiss and sounds of satisfaction like yum and umm came from those delicious lips. Her hand stroked his face, then reached around his head to pull him closer. Delighted with this turn of events, the Duke of Westerton complied enthusiastically and extended an arm around a slender waist. How much of the ale and brandy had he imbibed? Dizziness overcame his senses as he slid down on the floor and knew no more.

QUICK and EASY GOURMET

This meal may be served from ladies’ bridge to hefty dinner guests. Just increase the size of the proportions. Pop out this meal in a hurry and enjoy a cocktail with your company.

Red Salmon with Zesty Italian Dressing
Succotash or substitute Broccoli or Asparagus
Poached Pear Halves with Ricotta Cheese
Green Salad
Platter of Interesting Crackers
Dinner roles with Jam and Butter


SALMON
1 can red salmon, depending upon number of guests
Zesty Italian Dressing for drizzling

Clean bones and skin from salmon retaining pieces intact as possible. Cover with plastic wrap and refrigerate while finishing prep.

SUCCOTASH
Frozen lima beans
1 small can creamed corn
1 tbsp. butter

Cook beans until tender, 20 minutes from boil. Drain and mix in the corn and butter. Keep warm in a 210° F oven until ready to serve.

POACHED PEARS
½ fresh pear per guest (Increase to two halves for a dinner)
1 – 3 drops almond flavoring per pear half
1 tbsp. ricotta cheese per per half
Nutmeg
Sugar, optional

Remove core from pears. Turn flesh side down in two inches water in microwavable dish. Poach on high until tender, 2 – 3 minutes. Check for tenderness with a toothpick. Remove from oven, flip over and place in attractive dish, in custard cup, or on a bed of lettuce. Dribble almond flavoring on pears. Fill halves with cheese. Sprinkle lightly with nutmeg. Sprinkle on sugar.

TO SERVE
Arrange salmon on dinner plate and drizzle salad dressing lightly over fish. Add serving of succotash or other desired green vegetable. Garnish with lettuce or parsley. Offer a platter of interesting crackers. Serve poached pear halves on the side or scooped onto the plate. Pass basket of dinner roles and jars of jam.

Sounds like a lot of fuss, but it goes fast. The meal is light on calories so with guilt free conscience, serve a piece of your favorite pie or cake with ice cream or whipped cream. Some guests will decide poached pears suit them as a dessert.

Summer days with Summer Squash

Yellow Summer Squash has much potential for food creativity. I’m not a gourmet cook, but I love the fat yellow squash that will zoom past ripe if you so much as turn your back on them for a moment. Searching in the huge leaves to find the small tender ones is the ticket. If too big, discard the seeds and use the still tender outside.

This is my modified recipe and I heartily encourage you to create your own. For me the addition of Ritz Crackers is the secret to a tasty, easy meal. I presume any sort of crackers will do, but do try for the Ritz-only the best, ya know. Humming while I execute a fancy step or two around the kitchen. This recipe makes a perfect side dish for four.


Summer Yellow Squash Casserole
5 medium yellow summer squash (washed and parboiled)
½ onion, chopped fine
1 carton unflavored and unsweetened yogurt
½ cup cream cheese
1 egg slightly beaten
¼ cup milk
1 stick butter melted
1 package Ritz Crackers
Black pepper and salt to taste

Arrange squash and onion in casserole dish. Set aside.

Combine yogurt, cream cheese, and egg in a small bowl. Crumble crackers in a separate bowl, pour melted butter over and stir.

Pour liquid ingredients over squash and onion. Spread cracker mixture over the casserole evenly.

Cover and cook in microwave oven for approximately 15 minutes on high. Remove cover after 10 minutes and finish.

If desired, add small amount grated carrot, Parmesan cheese combined with Ritz Crackers, crumbled cheddar cheese over squash added before crackers.

FOR A COMPLETE MEAL
Oven baked pork chops covered with mushroom soup
Summer Squash Casserole
Corn bread (or biscuits)
Sliced tomatoes drizzled with Italian Zesty dressing on bed of lettuce
Peaches a la mode sprinkled with fresh blueberries

Hello, Juliana. Tell us a little about yourself.
Good day. I’m Juliana Carlotta Ervedosa Colebrook. As you can tell, my Mama was Portuguese and my father was an Englishman. You will find me in the book DANGEROUS HOMECOMING. Of course the English would never get their tongues around ‘Ervedosa’ so I only use my full name when signing documents.

Do you consider yourself to be unconventional?
No. In no way do I consider myself unconventional; at least I didn’t while I lived and worked in Portugal, but since coming to England I have discovered that I am unconventional because I am loosely classed as a ‘lady’ yet I work for a living. I am a nurse with experience in tending very sick soldiers. Then again, I am a murderess twice over and one must suppose that could be called ‘unconventional.’ They were murders of necessity, I must hasten to add. I did not set out to murder anyone, but in each case I had no choice. Life is not easy for women in the nineteenth century.

Do you embrace your uniqueness?
I don’t think I embrace my uniqueness. I never thought about being unique when I was in Portugal, but once I arrived in England I did my best to fit in. The English can be very cold to those who do not fit in. And I did not want to upset my relatives whom I had not met for many, many years. So, yes, it was a struggle to fit in. In Portugal, since I was raised in a convent that specialized in training young women to nurse the sick or teach the children of the wealthy folk their basic reading and Latin, I was not at all unusual.

Who is your role model?
My role model? Well, I’m not sure. I cannot think of any woman I admire—stop! Of course I have a role model. My role model is the Marchioness of Trewbridge. What an amazing woman. Unlike most women of her class she is industrious, holds her family together with kindness and talks a great deal of sense. Yes, I’d like to be like the Marchioness.

If you could do anything without concern for the consequences, what would it be?
Marry Colly Hetherington of course. But my background would bring him down, so I must drop that daydream.

Is your ideal man unconventional?
Not really. Colly is what he is. I cannot think of other men when I think about Colly. Other men cease to exist. He is kind and so very honourable. Screamingly so. Ah, what a man.

How about showing us a piece of your story?
Umm, here goes.

She clasped her penknife tightly in her free hand and hid it beneath her skirts. The dead eyes swivelled from Kit’s hemp binding, now lying on the floor, to Juliana’s face where she hovered protectively in front of Kit.

‘What a clever young lady,’ the revolting animal purred. At the menace in his voice, Juliana felt as though a snake had slithered up her spine. She stood up and held out her ungloved left hand to show him how she had untied the ropes. Dead-Eyes was too wary to come any closer, and she knew he couldn’t see in the dimness that the knots had been sliced through.

The pale eyebrows rose. ‘Perhaps those dexterous fingers can be put to better use. Come here.’ He crooked a long, thin forefinger and the muscles at the bottom of Juliana’s stomach jolted. Hold yourself together, Juliana. Your plan relies on your being as close to him as possible.

Slowly she sidled towards the creature and for the first time she saw signs of life in the cold eyes.

‘I always interview our new young ladies before they are thrust on our clients,’ he purred thickly. ‘I like to … warm them up, so to speak.’

Bile rose in her throat. She had never seen an iceberg but she had heard about them, and she had the distinct impression that a huge chunk of iceberg had just washed into the room. ‘Warm them up?’ She didn’t think so. Please, please, please God, don’t let him have touched Tilly.

Clutching the penknife in the palm of her right hand, she shuffled closer to him, measuring the distance carefully and also his height. Yes, he was tall. So was she. Flexing her body she moved closer, as if in a trance. His arm shot out and grabbed her.

‘No!’ Kit yelled behind her.

‘Stay back, Kit,’ she warned.

‘That’s right, my dear. You understand. You want to be tutored by Benny Ames, don’t you?’ He tugged her flush against his body.

Struggling not to recoil, she saw he was sweating. His tongue slid greedily over his yellowed teeth and he clasped her left hand like a lover. She kept her right hand hidden in her skirts. Ames’s breathing deepened as he tried to rub her left hand over his erection. Even as she struck, he was so lost in a haze of sexual pleasure he had no idea what had happened.

‘Hurry, Kit. Run!’ she yelled.

This time she was prepared for the blood. It spurted out of his throat in a great arc, dousing the holland covers beside them. Juliana ducked backwards holding the slippery knife handle. The knife blade was buried in Ames’s neck. He clutched his throat, his eyes wide with stupefaction.

Juliana’s stomach lurched and she dropped the handle. As Ames made the most fearsome gurgling sounds she edged around his flailing body and raced to the door. She hurtled down the stairs and cannoned into Kit. ‘Hurry, Kit. Hurry. Get out of here.’ She shoved the front door open and pushed him outside.

Kit slanted a glance back over his shoulder as his little legs sped along. ‘Where are we going?’

‘To the Rosemary Lane Inn. Hurry!’

‘But I don’t know where it is!’ He kept on running all the same, tugging Juliana along by the hand.

Juliana cast a quick glance behind them. The blue door with number 32 painted on it still stood innocently ajar and she could hear no sounds of pursuit.

‘Run towards the traffic noise,’ she gasped.

A few people glanced at them as they rushed by, but nobody seemed interested in a scruffy boy and a bloodstained, dishevelled young woman running helter skelter up the alleyways. No doubt it was a common sight in these parts.

As they stumbled from the dank alleyway into a wider street she saw a sign stuck on a building façade that said ‘Chamber Street’. The steady throbbing of her sore, bruised feet echoed the drumming in her head. Swaying, she knew she was nearly done for.

Kit glanced back and tugged her hand. ‘Come on, miss,’ he encouraged her, then he raised their clasped hands and stared at the red stains on Juliana’s fingers. ‘Thank you,’ was all he said.

Breathless, she gulped and said nothing, fighting her queasy stomach. Soon it would happen – the reaction. Last time she had shaken as if with the ague for several hours. And when she had finally found herself safe, she had huddled into a ball and cried and cried and cried. She had cried for her mother and for herself, and for all the other women who had been held in the power of men who did not deserve them.

But now was not the time for self-indulgence. She must protect Kit. She lifted her chin and plodded on.

Footsteps pounded behind them. Twisting around, she shoved Kit out of the way.

‘Juliana!’

Colly. On a wave of relief so strong it dizzied her, she ran straight
into his arms.

PUCKER UP, REGENCY STYLE

The origin of the lemon is a mystery, though it is thought that lemons first grew in Southern India, northern Burma, and China. A study of the genetic origin of the lemon reported that it is a hybrid between sour orange and citron.

The first substantial cultivation of lemons in Europe began in Genoa in the middle of the 15th century. The lemon was later introduced to the Americas in 1493 when Christopher Columbus brought lemon seeds to Hispaniola on his voyages. Spanish conquest throughout the New World helped spread lemon seeds. It was mainly used as an ornamental plant and for medicine. In 1747, James Lind’s experiments on seamen suffering from scurvy involved adding lemon juice to their diets, though vitamin C was not yet known.

By Jane Austen’s lifetime, lemons were not an uncommon household item and many recipes in both commercially published cookery books and private collections, such as Martha Lloyd’s household book, Call for the Fruit. The following recipe is fairly easy to replicate and offers a light and refreshing custard like dessert.

Lemon Cream
Take a pint of thick cream, and put it to the yolks of two eggs well beaten, four ounces of fine sugar and the thin rind of a lemon; boil it up, then stir it till almost cold: put the juice of a lemon in a dish or bowl, and pour the cream upon it, stirring it till quite cold.

London Theatre in Regency Times

By the early 19th century, The Industrial Revolution had made England the leading manufacturing and trading nation in the world. In 1800, London was already the world’s largest city, and its population would almost double over the next four decades, to approximately two million.

Large numbers of the working classes, drawn to jobs in commerce and manufacturing, began to attend the theatre for the first time, causing major changes to entertainments formerly reserved for more well-to-do patrons of the arts. Both Covent Garden and the Theatre Royal, Drury Lane, were rebuilt in the 1790’s to accommodate about 3,000 and 3,600 people, respectively. Minor theatres were opened outside Westminster in the 1780’s and 1790’s; then, in 1804, when the Earl of Dartmouth became Lord Chamberlain, he authorized the licensing of minor theatres inside the City of Westminster, so long as they did not infringe upon the rights of the “patent houses” of Covent Garden, Drury Lane and the Haymarket. He also authorized longer seasons for the Haymarket, which had been restricted to a five-month season and, by 1812, it was open seven months of the year.

Attempting to retain audiences, the patent theatres began to include minor dramas in their offerings and extended the evenings to five or even six hours. By 1820, it wasn’t unusual for the evening’s bill to include two full-length plays, an afterpiece, and a number of variety acts.

Since only the patent houses could play regular drama, along with the minor genres, the other theatres found loopholes offered by the burletta and the melodrama, which was a three-act play with a musical score. Thus, a regular drama, such as a work from Shakespeare, could be performed in three acts with musical accompaniment and called “melodrama.” This game of ruse and subterfuge continued throughout the Regency and after, until the Theatre Regulation Act of 1843, which abolished the privileges of the patent theatres, and allowed any licensed theatre to perform works of any type, although all plays continued to be licensed by the Lord Chamberlain.

The upper classes might have worn their very best, but otherwise, theatre-going was an informal business, with members of the audience talking loudly and arriving or leaving at any time during the performances. Dandies strolled and mingled in the “pit,” taking snuff and showing off the latest fashions.

Most of the romantic poets of the day attempted drama, including Coleridge, Wordsworth, Keats and Shelley. George Gordon, Lord Byron, who was a member of the governing committee of Drury Lane, wrote more plays suited for the stage than the others, although only one was actually performed during his lifetime (and that one, “Marino Faliero,” in 1821, over his objections).

The best known actors and actresses on the London stage during the Regency included several members of the Kemble family, especially Sarah Kemble Siddons, who was considered the greatest tragic actress of her day until her retirement in 1812. The Kemble “classical” school of acting was continued by Charles Mayne Young (1777-1856), J. M. Vandenhoff (1790-1861), and Eliza O’Neill (1791-1827). Their classical approach was challenged after 1814 by the romantic school, perhaps best exemplified by Edmund Kean. Kean perfected the style, and exerted his “star power” frequently to demand £50 or more for each performance, an amount unheard of before his time. Other well-known performers, such as William Charles Macready (1793-1873) and Mme. Eliza Vestris (1797-1856), later went from the stage into theatre management.
