It's a Peach, Hon!

A sizzling summer deserves a cool dessert. This tasty treat is one my family loves and because it’s so easy to make we have it often.

Peach Crumble

1 – 15.25 oz. can peach chunks in heavy sauce
½ tsp. cinnamon
1½ tbsp. cornstarch
¼ cup apple juice

Pour peaches into a small saucepan. Stir in remaining ingredients. Bring to a boil, lower heat and cook for 1 minute. Stir constantly so the mixture doesn’t burn. If the sauce is too thick add more apple juice one tablespoon at a time.

Scoop peach mixture into an ungreased 1 quart, or slightly smaller, ovenproof casserole. Individual ramekins work well, too.

Topping
½ cup flour
½ cup sugar
2 tbsp. butter or margarine, cut into bits

Preheat oven to 375° F.

Combine flour and sugar in a small bowl. Add butter bits then use your fingertips to blend the mixture into coarse crumbs. Sprinkle over peaches.

Bake 20 – 25 minutes or until topping is a lightly golden.

Serve smothered in whipped cream.

SWEET TREAT from the DEEP SOUTH

Here is a dessert I confiscated and made my own. This New Orleans treat is perfect on a special night for two as well as holiday gatherings and everything in between.

Here are a few tips to make preparing this dessert easier:

Soak the raisins in bourbon before you start this recipe. You can even soak them a day or two ahead.

The bread you use should be a little dry. If the bread you are using is fresh, after you cube it, spread it out on a sheet pan and put it in a 200° F oven for 10 minutes.

Go easy on the bourbon sauce. It is strong! But so delicious.

Bread Pudding
1 cup raisins
¼ cup bourbon whiskey
1 loaf French bread, at least a day old, cut into 1-inch cubes
1 qt. milk
3 large eggs
2 cups sugar
2 tbsp. vanilla extract
¼ tsp. allspice
¼ – ½ tsp. cinnamon
3 tbsp. butter, melted

Combine raisins and bourbon in a small bowl. Cover and soak for 1 to 2 hours or until the raisins have absorbed most of the bourbon.

Preheat oven to 350° F.

Pour milk into a large bowl. Add bread and press into milk with your hands or a large spoon until all the milk is absorbed.

In a separate bowl, whisk eggs until frothy. Whisk in sugar, vanilla, allspice, and cinnamon. Pour over bread mixture. Add bourbon-soaked raisins, with or without the remaining soaking liquid. Stir gently to combine.

Pour melted butter onto bottom of a 9 x 13-inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour in bread mixture then egg mixture.

Bake 35 – 45 minutes, until liquid has set. The pudding is done when the edges are just brown and pulling away from the pan edge.

Bourbon Sauce
½ cup (1 stick) butter, melted
1 cup sugar
1 large egg
½ cup Kentucky bourbon whiskey, amount according to taste

Make the bourbon sauce while the bread pudding is cooking.

Melt butter in a saucepan on low heat. Whisk in sugar and egg. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove pan from heat.

Do not allow mixture to simmer! Or the sauce will curdle. By the way, if your sauce curdles, just take it off the heat and blend it smooth in a blender.

Whisk in bourbon. Whisk again before serving. The sauce should be soft, creamy, and smooth.

Serve with whiskey sauce on the side. This dessert is best eaten the day it is made.

DESSERT TIME!

I (Catherine) have recently discovered avocado puddings. Never heard of them? Apparently, they are full of good fats, loads of fiber, have a low glycemic index (which is important for those watching their carbs, and they can be made without dairy products, if you are vegan or lactose intolerant). They have the creaminess of instant puddings without the unnatural ingredients that comes in that box. The extra bonus of avocado puddings--they taste good. The kiddos will never know they are eating something good for them. So far, I’ve experimented with chocolate, which was super chocolatey and not as sweet as it could have been since I skipped a lot of the sugar. I like to see how low-sugar I can possibly go.

I love pumpkin. Donald not so much. The other day I got a pumpkin craving, so I decided to play with avocadoes and pumpkin. This newest culinary invention is a Ginger Pumpkin pudding. I liked it, so I decided to share the recipe. Now I won’t guarantee this recipe that makes 4 servings is low calorie, but there is quite a bit of fiber in it to help offset some of the carbs.

Avocado Ginger Pumpkin Pudding


    • 1 ripe avocado
    • ¾ cup canned pumpkin
    • 1 ½ - 2 cups vanilla flavored yogurt, divided
    • ½ tsp. lemon juice
    • 1 tsp. pumpkin pie spice
    • 8 small gingerbread cookies, crushed, with 4 tsp. reserved
    • Canned whipped cream or make your own
  •          4 tbsp. shaved chocolate from a candy bar


Cut avocado in half, discarding pit and skin. Put flesh in a food processer and blend until smooth.

Add pumpkin, and ½ of yogurt, lemon juice and spices to avocado and blend until well mixed.

Spoon remaining yogurt into small glass dessert cups, filling cups about ½ full. Spread evenly in cup.

Spoon pumpkin mixture over the yogurt, spreading evenly.

Cover dishes with plastic wrap, gently pressing the wrap onto the top of the pudding.

Chill.

When ready to serve, top the pudding with the crushed gingerbread cookies, sprinkling evenly on top of pudding.

Add a dollop of whipped cream to top of pudding. Sprinkle reserved cookies and shaved chocolate on whipped cream.

If a mark didn’t come out of the bar soon, he’d have to change his hunting spot.

Danny Shaw glanced at his watch. In the past hour, only two men—too big for him to handle—had staggered out of the Dew Drop Inn Bar and Grill. He needed someone rich and easy to take down. And soon. If he arrived late again, he’d get canned. And if he lost one more job, he’d lose Lulu.

The door opened, spilling crowd noise and blue haze onto the dimly lit street. He moved back into the shadow of the building. Waiting.

A slender woman walked by, her legs wobbling on spiked heels as the hem of her blue slinky dress swished around her thighs. Whiskey and perfume wafted on the air. As she reached to smooth back her blond hair, a prism flashed on her ring finger.

As his gut tightened, adrenalin pumped through him. Perfect. Tipsy and a rock too. A big haul could make this his last job this week, allowing him more time to spend with Lulu.

He pulled his ski mask down then took his gun from his coat.

Withdrawing a silencer from his left pocket, he screwed it onto the barrel, and stepped out. The woman didn’t notice him, so he scanned the street for witnesses. No one around. Closing the gap, he made his move.

Shaw jammed the gun barrel in her back and hooked her arm. “Don’t scream,” he whispered, “and I might let you live.”

Under his hold, she stiffened. Her high heels tapped rapidly on the pavement as he steered her into the dark, littered alley. When they were well into the shadows, hidden from passersby, he shoved her against the graffiti-covered building. “Gimme your purse and jewelry.”

The woman raised perfectly manicured hands above her head, her shoulder angling toward him as she started to twist around.

“Keep your face to the wall,” he ordered.

She mumbled something into the bricks and then lowered her left hand, dangling a bejeweled handbag behind her head.

“Now the jewelry.” He snatched the purse.

She unhooked her necklace, slipped off her watch and diamond ring, then held them out.

He stuffed them into his pocket. “The other ring, too.”

“That ring has no value. It’s costume jewelry my niece gave me.”

“Take it off.”

“You’ve got my cash and credit cards, and my diamond. Isn’t that enough?”

Damn. He hated when they resisted. “Give me the ring.”

She gave an almost imperceptible shake of her head. “No.”

He jerked her around to face him. “Dammit, woman. Give me the freaking ring or I’ll blow your head off.” He yanked on the band.

Without warning, she swung her hand up, connecting with his jaw. Stunned, he stumbled backward, still clutching the hand with the ring. They fell to the pavement. Her hands clawed at his, and her feet kicked his shins, scrabbling their legs together.

Fighting for control. Fighting for the gun.

Wrapping his legs around hers, he rolled her over and pinned her beneath him with his body. Freeing his hand from her grasp, he slammed her skull on the ground. Her head rolled to the side and she lay still.

Certain he’d knocked her out, he tried to remove the ring from her finger. Suddenly she bolted up, head-banged him, and grabbed his gun hand.

As he struggled to keep control of the weapon, the barrel twisted toward him. Heart pounding, he watched his life flash in front of him.

Abusive childhood. Lousy job. Lulu. The elaborate wedding plans she’d made. He didn’t want to die. Not now.

He wrenched the gun toward the woman. The metallic pfft startled him. Round-eyed shock reflected in the woman’s face.

Shaw’s heart stopped racing as she relaxed in his grip, then amped back up, pounding against his ribs. Shit. Assault, battery, and now . . . murder. Quick and easy money to pay for the wedding. That’s all he’d been after. They’ll put me away for life if I get caught. Lulu’s gonna be pissed if I screw up her wedding plans.

Pushing into a squat, he stared at the dark stain spreading across the dress front. He removed the ring from the woman’s finger. She should have just given it to him.

The woman stared at him, blood seeping from the corner of her mouth. “Return the ring, or you’ll be sorry.”

With a short laugh he stood. “Big words for someone bleeding to death.” After dropping the ring into his pocket, he gathered the scattered contents of her purse, and started to leave.

“Wait.” The words sounded thick and slurred . . . two octaves deeper . . . with a Scottish lilt.

Shaw frowned and spun back toward her. The pounding in his chest increased. On the ground, where the woman had fallen, lay a man.

He wore the same slinky blue dress she had—the seams ripped, the dress top collapsed over hard chest muscles, instead of smoothed over soft, rounded curves. The hem skimmed across a pair of hairy, thick thighs. Muscled male thighs. Spiked heels hung at an odd angle, toes jutting through the shoe straps. The same shoes she’d been wearing.

The alley tipped. Shaw leaned against the dumpster to steady himself. He shook his head to clear the vision, then slowly moved his gaze over the body.

A pair of steel-blue eyes stared out of a chiseled face edged with a trim salt-and-pepper beard. Shaw whirled around scanning the alley.

Where was the woman? And who the hell was this guy?

Terrified, Shaw fled.

The dying man called out, “You’re cursed. Forever.”

A Perfect Pear Dessert

We like to bake here in Carpenter Country, and we love to eat what we bake. Today we want to share one of our favorite recipes with you. Hope you enjoy as much as we do.

3-2-1 Pear-Up
3 pears, peeled and sliced
3 tbsp. sugar
3 tbsp. oatmeal
2 tbsp. pecan pieces
2 tbsp. flour
2 tsp. lemon juice
1 tsp. pumpkin pie spice (or cinnamon, if you prefer)
1 tbsp. butter
1 spritz nonstick cooking spray

Preheat oven to 350°F

Spritz the bottom of a 9" round pie pan with nonstick cooking spray.

Toss the pear slices in the lemon juice and add them to the pie pan.

Measure the sugar, oatmeal, pecan pieces, flour, and spice into a plastic baggie. Shake to mix. Add the butter and knead the bag with your fingers until the mixture resembles soft crumbs.

Empty the bag of topping mixture into the pie pan on top of the pears.

Bake for 20 minutes or until the pears are soft.

Tips and tricks
Add a tablespoon of butter on top of the pears if you like a syrupy juice.
Experiment with different types of nuts for different flavors.
Raisins or dates add a sweet touch.
Top each serving with sweetened whipped cream for extra yum.

Beat the Heat Dessert

If you like to have dessert on hand for those daily ice cream craving family members or guests, this cake keeps well in the freezer. It’s expandable, too. Just use a bigger pan, more ice cream and extra whipped topping. When it comes to ice cream, more is better, right?

No Bake Ice Cream Sandwich Cake
What you’ll need:
One package (12 bars) of ice cream sandwiches
One container (8 ounces or larger) of whipped topping (or make your own with a pint of whipping cream and 3 tablespoons of sugar)
Garnish of your choice: Sprinkles; chopped nuts; caramel, chocolate or other syrup
Glass or plastic pan with a lid

Directions:
Arrange six ice cream bars in a crisscross pattern in the bottom of the pan. (You may have to cut the bars to make them fit. Of course, then you’ll need to eat those little left-over pieces—who said chefs have an easy life?)

Spread a layer of whipped cream over the bars. *

Crisscross the remaining six ice cream bars on top of the whipped cream.

Slather another layer of whipped cream over the top and sides.

Decorate with sprinkles or chopped nuts, or drizzle with caramel or chocolate syrup.

Cover and freeze 2-3 hours or overnight.

Remove from freezer 10-15 minutes before serving to soften.

*For a richer cake, add a layer of syrup and/or chopped nuts over the whipped cream.

BERRY US BLUE

I have a confession to make. Sometimes…sometimes here in Carpenter Country I am not actually sitting at my computer all day working diligently. That's right. Sometimes I…I go OUTSIDE! Into the SUNSHINE!

One of those special occasions took place in early May when my husband and I headed out to the u-pick field. Because we are serious blueberry pickers, we brought home enough berries to enjoy a few bowls fresh-from-the-field, to put a couple of handfuls on top of cereal, and to make biscuits, bread, buckles, cheesecake, coffee cake, crumbles, cobblers, donuts, muffins, pies, pancakes, scones, and ICE CREAM!

Are you screaming yet for blueberry ice cream? Us too. In fact, we're going to take a break and sample a bowl. Here's the recipe in case you want a break from your own busy day. You will need an ice cream maker (ours makes about 1½ quarts) and a blender or food processor for this recipe.



HOMEMADE BLUEBERRY ICE CREAM
1½ cups fresh blueberries, washed, and dried (slightly less than a pint of fresh, or you can use frozen berries if you drain them well)
1 pint (2 cups) heavy whipping cream
1 cup milk (whole or reduced fat, your choice - coconut milk is a delicious substitute)
½ cup sugar (more or less to suit your own sweet tooth -- or teeth)
½ tsp. vanilla extract

Place rinsed blueberries in the blender or food processor and process for a minute or less.

Add the whipping cream, milk, sugar, and vanilla extract to the pureed blueberries in the blender.

Process 10-20 seconds, just until mixed - not too long, or you’ll have whipped cream.

Pour the mixture into the ice cream maker and churn for 20 minutes.

If you like soft, milkshake-type ice cream, pass out the spoons and dig in. For firmer ice cream, scoop the ice cream into a container and freeze two hours.

Best Cheesecake EVER!

Talk about a dessert that delivers, this divine cheesecake takes…well, takes the cake! Whether you’re hosting the party or on board to bring something tasty, this dressed up treat will make heads turn, and mouths water. Perfect for holiday gatherings or celebrations, with a total prep and bake time of 5 hours and 30 minutes (includes refrigeration), this cheesecake easily serves a crowd of sixteen of your closest cohorts. 

Toblerone Caramel Cheesecake

1¼ cups Oreo Baking Crumbs
¼ cup butter, melted
3 packages (250 g/8.82 ounces each) brick cream cheese, softened
¾ cup packed brown sugar
1 tablespoon vanilla
3 eggs
⅓ cup caramel ice cream topping
1 bar (100 g/3.52 ounces) Toblerone Swiss Milk Chocolate, coarsely chopped 

Preheat oven to 350° F. 

Mix crumbs and butter in a small bowl. Press mixture onto bottom of 9-inch springform pan. 

Beat cream cheese, sugar, and vanilla in large bowl with electric mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust. 

Bake 40-45 minutes or until center is almost set. Run knife around rim of pan to loosen cake. Cool cake before removing rim. Refrigerate 4 hours. 

Spread caramel topping over cheesecake just before serving. Garnish with chopped chocolate. Enjoy!

Suddenly, a radiant white light beamed from the archway like a lighthouse beacon. Drake hooded his eyes. Amanda grimaced, cradled her stomach, and fell to her knees. Perspiration beaded across her forehead while she fumbled for the Timekeepers’ log in her purse. Amanda pulled a thin, pencil-like writing instrument Lilith called a crystal chalkis out of the log’s spine, and opened the log. Her left hand jumped across the page, scrawling at an incredible rate. Amanda’s breathing became labored. She tossed the crystal chalkis and Timekeepers’ log aside, and lurched to vomit across the lawn. 

“What the—” Jordan crouched to steady her. “Amanda? Are…are you okay?” 

Treena heaved. “Oh, I don’t do pity puke well.” 

“Neither do I,” Ravi said, puffing his cheeks. “I can’t unsee or unhear that.” 

A sharp whoosh—like the sound of a spaceship’s door opening on a science fiction television show—made Drake glance into the archway. Lilith appeared with her arms open wide, and a slight halo around her slim body. The shimmering, dark blue sleeveless dress she wore billowed as if a great force rolled in behind her.  

“Greetings, Time...” Her sea blue eyes widened. “Amanda, let what you feel pass. They are old emotions embedded into the vibration of your new mission.” 

“Embedded emotions?” Drake asked. “Is that like those haunted imprints we experienced in our last Timekeeper mission?” 

Melody grabbed the garden hose and rushed over to Amanda. “John, please turn on the tap.” 

“Hang in there, Amanda, the cool water will make you feel better,” the Prof said. 

Lilith clasped her hands together, and nodded, making the numerous quartz crystals holding up her blond hair quiver. “Yes, Drake, but worse. These haunted imprints go deeper.” 

A terrible ache spiked through Drake’s stomach. He picked up the opened Timekeepers’ log, swallowed hard, and read aloud, “April 8th, 1855—Fields of blood bathe the deep south’s soil as a race of people continue to toil. Broken in body, but not in soul, they wait for a King to make them all whole. 

Drake stuffed the crystal chalkis into the spine of the Timekeepers’ log. He imagined wearing the standard issue red uniform of a crewman in his favorite space show. The crewman who always gets killed by the end of the episode. Was this a call of duty or a suicide mission? Drake’s belly burned. Now he wanted to puke too.

Easy and Delicious - the Perfect Dessert

Our friend Dorothy Rea is a marvelous cook and baker. She graciously agreed to share her recipe, one of my favorites, for her lemon bars. So easy to make and delightful to eat.

DOROTHY’S LUSCIOUS LEMON BARS

CRUST
2 cups flour, not sifted
½ cup confectioner’s sugar
1 cup butter or margarine, not softened

Preheat oven to 350° F.

Combine all ingredients in a large bowl. Cut with a pastry cutter until mixture is pliable enough you can press it into a 9 x 13-inch metal pan.

Add dough to pan and press as evenly as possible all across the bottom and halfway up the sides.

Bake 25 minutes. Leave oven on to complete the recipe.

FILLING
4 large eggs, slightly beaten
2 cups sugar
6 tbsp. lemon juice, use fresh if possible
4 tbsp. flour
½ tsp. baking powder
Confectioner’s sugar, for dusting

Mix eggs, sugar, and lemon together in a medium size bowl. Gently fold in flour and baking powder.

Pour over baked crust evenly. Set in hot oven and bake 25 minutes.

Cool completely in pan then cut into serving squares. Dust with confectioner’s sugar and enjoy!

Full Moon Not Required

These tasty treats combine the rich flavors of chocolate with a thick layer of marshmallow crème.

Total Eclipse Moon Pies
1 cup all-purpose flour
¼ cup unsweetened cocoa powder
1 tsp. baking soda
⅓ tsp. salt
½ cup sugar
¼ cup butter, softened
1 large egg white
½ cup 1% milk
¾ cup marshmallow crème

Preheat oven to 425° F.

Combine flour, cocoa powder, baking soda, and salt in medium-sized bowl. In a large bowl, cream butter and sugar together. Add egg white and beat until fluffy with an electric mixer on medium speed, about 2 minutes. Stir in flour mixture, then milk, until just blended.

Drop rounded tablespoons of dough onto large, ungreased baking sheets 2-3 inches apart to make 18-20 cookies (Make sure to make an even number of cookies). Bake until the tops spring back when lightly touched, about 5 minutes.

Cool completely. Spoon 2 teaspoons of marshmallow crème on bottoms of half the cookies made. Top with remaining cookies.

Above the tree line floats an airship close to three hundred feet long with a slightly rounded wooden hull. Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

KOLACKY or KOLACHE?

What's the difference? Nothing that we were ever able to determine. But no matter how you spell this wonderful pastry it always tastes good. This recipe is one my daughter Dru, an excellent baker, adapted from my mother. It's easy to make and hard to keep once the family gets to them.

KOLACHES
8 oz. cream cheese brick, softened
1 cup flour
8 tbsp. (1 stick) butter or margarine, softened
1 can Solo filling, your preferred flavor
Powdered sugar

Blend all ingredients except filing in a medium-sized bowl. The trick to making tender kolackys is not to overwork the dough. If you do the pastry will be tough.

Cover with cling wrap. Refrigerate for at least 2 hours, preferably overnight.

Preheat oven 375° F.

Turn dough onto floured board and then roll out to less than ¼ inch thick.

Cut dough into circles using the rim of a small glass.

Lay ½ tsp. of filling on each circle. Gently overlap two sides to contain the filling.

Bake 10 – 12 minutes or until light brown.

Sprinkle with powdered sugar and enjoy!

A Treat from Down Under

Deserts do not have to be difficult to prepare. This one is delicious and simple and that's why it's a favorite of mine.

EASY-PEASY PUDDING
4 eggs
2 cups milk
1 cup sugar
2 tbsp. vanilla essence, vanilla extract
½ cup butter
½ cup plain flour
1 cup shredded coconut

Preheat oven to 180c 250° F.

Butter a pie dish. You can also line with baking paper to make sure the pudding comes out intact.

Combine all ingredients into a blender. Mix well.

Pour mixture into prepared dish. Bake about one hour until the center is firm.

Whipped cream and fresh or stewed fruits are wonderful accompaniments.

Now sit back and enjoy your pudding while you scan my latest romantic suspense.

A SWEET FOR YOUR SWEETIE

This is a perfect treat for your special someone. And what better way to show you care then to bake something good.

PEANUT BUTTER PIE
CRUST
1 ¼ cup chocolate cookie crumbs. (20 cookies)
¼ cup sugar
¼ cup butter or margarine, melted

Preheat oven 375°F.

Combine ingredients in a small bowl. Press into a 9-inch pie plate.

Bake 10 minutes. Cool on wire rack.

FILLING
1 (8 oz) pkg. softened cream cheese
1 cup creamy peanut butter
1 cup sugar
1 tbsp. butter or margarine, softened
1 tsp. vanilla extract
1 cup heavy cream, whipped

In a medium-sized mixing bowl, beat cream cheese, peanut butter, sugar, butter, and vanilla until smooth. Fold in whipped cream.

Gently spoon into crust. Garnish with grated chocolate, chocolate cookie crumbs, or fresh raspberries.

Refrigerate and enjoy!

Prologue
1993

I was jerked from my sleep while the phone was still buzzing its first high-piercing ring. I glanced at the clock on the nightstand beside my bed. It read 4:17 a.m. I knew something was wrong.

The second ring was abruptly broken up and my mother’s muffled voice carried into my room. I was already sitting upright in my bed when my bedroom door squeaked open. My mother’s slight figure appeared as a shadow near my door.

“Lyssa? You up?” she asked.

“What’s wrong?” My voice was no louder than a whisper.

I watched my mother slowly make her way into the dark room. I couldn’t make out the expression on her face, but the stiff movement of the outline of her body was hesitant.

She turned on the lamp and sat down beside me. Her face was pale. She let out short, shallow breaths. It seemed difficult for her to look me in the eyes.

“What is it?” I asked. “What’s happened?”

Finally, my mother looked at me with pain in her eyes. “Lyssa . . .” She smoothed her hand gently across my arm. “Abbey’s dead.”

I took in her words without an ounce of denial. The reality of what my mother had told me was instant.

My best friend was dead.

ELEGANT and REFRESHING

This is a quick and easy recipe that is perfect for summer, but tastes great any time of the year. There is very little preparation involved in this 4-ingredient dish and you have a beautiful looking dessert for your family and friends.

Reverse Strawberry Cheesecake
1 quart fresh strawberries
1 8 oz. package cream cheese
1 tbsp. vanilla
1 package of Animal Crackers, my family likes the chocolate ones

1 Icing Decorator

Wash the strawberries and cut off the stem/leaves. Use the largest berries for the containers, reserving the smaller ones for the filling. Cut the bottom off of the berries so they sit flat on a plate and hollow out the center so it can hold the filling.

Place the “container” berries on paper towels. This helps to dry them a bit so the juices do not run onto the plate after they are filled.

Blend the cream cheese, vanilla, and small strawberries well in a bowl. Put the mixture into the icing decorator and fill the container berries.

Place the filled berries on the plate and top with an animal cracker of your choice.

Serve immediately.

What’s Next?
I am currently working on two projects. I have a two book epic fantasy in the draft/beta reading stage and I am working on a LitRPG novel concept. For those who might not be familiar with the genre, LitRPG is a subgenre of science fiction and fantasy which describes the hero's adventures within an online computer game. Finally my love of gaming and writing are coming together! I knew all of those nights I stayed up playing MMORPGs would pay off someday. Right now I am in the world-building stage for my LitRPG.

It all boils down to more time in front of the computer and putting words on the screen. Over the next few months I will make more announcements as events warrant. Until then my short stories are available on Amazon.com and are free if you have Kindle Unlimited.

BERRY US BLUE

We have a confession to make. Sometimes…sometimes here in Carpenter Country we are not actually sitting at our computers all day working diligently on our next book. That's right. Sometimes we…we go OUTSIDE! Into the SUNSHINE!

One of those special occasions took place in early May when we headed out to the u-pick field. Because we are serious blueberry pickers, we brought home enough berries to enjoy a few bowls fresh-from-the-field, to put a couple of handfuls on top of cereal, and to make biscuits, bread, buckles, cheesecake, coffee cake, crumbles, cobblers, donuts, muffins, pies, pancakes, scones, and ICE CREAM!

Are you screaming yet for blueberry ice cream? Us too. In fact, we're going to take a break and sample a bowl. Here's the recipe in case you want a break from your own busy day. You will need an ice cream maker (ours makes about 1½ quarts)and a blender or food processor for this recipe.



HOMEMADE BLUEBERRY ICE CREAM
1½ cups fresh blueberries, washed, and dried (slightly less than a pint of fresh, or you can use frozen berries if you drain them well)
1 pint (2 cups) heavy whipping cream
1 cup milk (whole or reduced fat, your choice - coconut milk is a delicious substitute)
½ cup sugar (more or less to suit your own sweet tooth -- or teeth)
½ tsp. vanilla extract

Place rinsed blueberries in the blender or food processor and process for a minute or less.

Add the whipping cream, milk, sugar, and vanilla extract to the pureed blueberries in the blender.

Process 10-20 seconds, just until mixed - not too long, or you’ll have whipped cream.

Pour the mixture into the ice cream maker and churn for 20 minutes.

If you like soft, milkshake-type ice cream, pass out the spoons and dig in. For firmer ice cream, scoop the ice cream into a container and freeze two hours.

EXCERPT
It wasn’t the food. Happy Haven Retirement Community’s chef prepared delicious, artistically plated roast beef and mashed potatoes every Sunday evening.

Emma Twiggs set down her fork. No, the food wasn’t the problem.

It wasn’t the chatter or the whispers in the dining room, or the sidelong glances of other Happy Haven residents. Happy Haven was a hotbed of gossip and rumors. Being the topic du jour was familiar territory.

It certainly wasn’t her dinner companion. Arnie Bracken was always charming, kind, and intelligent, no matter what her best friend Olli thought.

No, food, chatter, and Arnie, combined or singular, were not the cause of her uneasiness.

The problem –

"I know what you’re thinking, Em," Arnie said.

"Do you?" She picked up a glass of lemon-spritzed water and tried to swallow past the tightness in her throat. She could only hope he had no idea of what she was thinking.

"Sure." He leaned forward and lowered his voice. "You’re wondering how someone as fit as Jo accidentally drowned in the swimming pool."

Emma froze. Her fingers tightened on the glass. The chatter in the room faded into muted background noise. She had deliberately not been thinking about Jo. She would not think about Jo. How did Arnie know she'd been thinking about Jo?

"I’ll tell you how," he said. "Jo was murdered, and Cahan murdered her."

"I am not thinking about – Murdered?" The lump in her throat expanded to the size of the Brussels sprouts on her plate. "By Todd?"

"Murdered. By Cahan. And we need to prove he did the deed."

"Arnie." Emma set the glass on the table and uncurled her fingers from it. She coughed to clear the non-existent Brussels sprout from her throat. "The paramedics told us Jo’s death was accidental. An accidental drowning."

"Yeah, I know all the euphemisms they used."

Emma did too. The headline in Harmony Notes, the local daily, had read TRAGIC ACCIDENT AT HAPPY HAVEN. Unfortunate was the word murmured most frequently at the funeral service, followed closely by regrettable.

She said, "Harmony’s police department and the district medical examiner agreed with the paramedics."

"They’re wrong."

A trickle of condensation wept down the side of the glass and puddled into a teardrop on the table. All the words used to describe Jo’s death were wrong. Wrong and inadequate. Words were inadequate now too.

Because this was the problem she had been avoiding.

Her role in Jo’s death.
