EATING WELL

“Well, dog-gone,” my father replied when I told him my research on the subject revealed that hickories and pecans are in the same family of trees, and that pecans grow as far northeast as Southern Ohio, our original stomping grounds. While hickories grow in abundance there, neither my father nor I could recall seeing a tree giving forth pecan nuts in our area. It was also news to us that Native Americans were responsible for naming both of the trees. The word "hickory" is said to have come from the Algonquian Indian word "pawcohiccora," while “pacane,” or “paccan,” or “pakan,” meaning “a nut so hard it has to be cracked with a stone,” evolved into “pecan.” 

If we were sons and daughters of Nashville, Memphis, Dallas, New Orleans, and other warm places along the “Pecan Belt,” we would be familiar with the resumé of pecans—we would know, for instance, that pecan trees can grow to be one hundred feet tall and live to be one thousand years old—quite a bit taller and much older than hickories. Now that’s a lot of nuts! In addition, after peanuts, which aren’t tree-nuts at all, pecans are the most popular nuts in North America. In fact, the United States produces over eighty percent of the world’s crop of this indigenous commodity. This is true even though along with electricity, automobiles, airplanes, telephones and countless other good things from North America, with the help of humankind, pecan trees eventually set root in other places around the globe such as Australia, Brazil, China, Israel, Mexico, Peru, and South Africa. 

Along with many other firsts credited to him, Thomas Jefferson, the third president of the United States, is recognized as the person who introduced the pecan to areas east of the Mississippi Valley, its native ground. Having discovered them during a trip to the area, he carried some nuts and seedlings back to his home in Virginia. He also introduced them to his friend, fellow Virginian, and first president of their homeland, George Washington. Thereafter, both of the gentlemen grew the trees on their plantations, an enterprise that spread to the southern states of the country. Subsequent to the Civil War, Union soldiers transported the seedlings and nuts to the north, which increased the regard for the buttery-flavored nut even further. It was a black-slave-gardener named “Antoine,” at Louisiana’s Oak Alley plantation, however, who was responsible for developing the first cultivar of the tree. In 1876, it was dubbed, “Centennial,” in commemoration of the one-hundredth anniversary of the founding of the United States. Since then, in deference to the people who fostered them originally, many of the current, five-hundred cultivars of the plant have been named for Native American tribes including “Cheyenne,” “Kiowa,” “Sioux,” “Choctaw,” and “Creek.” 

No overview of pecans would be complete without including pralines, the nutty confection originated in France using almonds rather than pecans. Stories abound regarding its appearance in the French cuisine. One account is that Clement Lassagne, chef of Marshal du Plesses-Praslin (1598-1675) concocted it after watching children in his kitchen nibbling on almonds and caramel. Or, it might have happened when one of his young and clumsy apprentices knocked over a container of almonds into a vat of cooking caramel. The most popular version involves Marshal du Plessis-Praslin himself. A notorious ladies man, he is purported to have asked Lassagne to develop an alluring treat for his paramours, which he presented to them in decorative little packets. For a time, the treat was referred to as “praslin,” after the lascivious gentleman, but evolved into “praline,” 

Brought to Louisiana by French settlers, chefs in New Orleans eventually substituted pecans for almonds and added cream to the French praline recipe. The basic “Big Easy” recipe for this Creole treat comprises pecans, brown sugar, white sugar, cream, and butter added to either rum, vanilla, chocolate, coconut, or peanut butter. Pronounced “prah-leen” in Louisiana, it is “pray-leen” to the rest of us, but regardless of the way one pronounces it, it is a Southern delicacy. Having always been sold on the streets of New Orleans, passers-by are lured to the Vieux Carré-stalls of praline vendors by the mouth-watering aroma, as well as the Creole call, “Belles Pralines,” “Belles Pralines!

Pecans are rich in protein, vitamins and minerals. Clinical research has found that eating about a handful of plain pecans each day may help lower cholesterol as effectively as designated medications. They also are said to promote neurological health as well as delay age-related muscle-nerve degeneration. If you have a hankering for baked-goods, but want to avoid the unhealthy ingredients in traditional recipes, the following is a tasty and healthy substitute. It is also a better choice for people sensitive to gluten. This recipe batter can be used for baking basic bread, pancakes, crackers, crepes and cupcakes, but add maple syrup or Stevia to sweeten the batter.   

The recipe normally substitutes almond flour for flours made from grains. I have found that by adding garbanzo/fava bean flour to the almond flour, a smoother and finer batter is the result. It also calms the rather strong flavor of almond flour. Cranberries are featured in this recipe, but any berry or fruit, will do.


Healthy Berry-Pecan Muffins

Topping
1 tbsp. (15 ml) ground cinnamon
2 tbsp. (25 ml) maple syrup
1 tbsp. (15 ml) unsalted butter 

Combine ingredients in a small bowl and mix well.

Muffin Batter

2 ½ cups (625 ml) almond & garbanzo/fava flour mixture
1 cup (250 ml) chopped pecans
¼ tsp. (1 ml) salt
½ tsp. (2 ml) baking soda 
1 tsp. (5ml) ground cinnamon 

Combine the following ingredients in a separate bowl.

2 eggs
½ cup (125 ml) Yogurt
½ cup (125 ml) maple syrup
1 ½ cups (375 ml) cranberries, or berries or fruit of choice 

Preheat the oven to 325° (160°C).

Line a muffin tin with large baking cups

Combine the wet ingredients in another bowl and pour into the first bowl of the dry ingredients. Mix well. Add enough water to make the batter about the consistency of toothpaste. Evenly fill each baking cup with the batter and drizzle the topping over each one.  Bake for 20 to 25 minutes.)

This is a good day for baking a delicious treat, and what can be better than baking with pecans and fruit? A delightful breakfast, snack, or dessert of Healthy Berry-Pecan Muffins and a cup of coffee awaits you. To soothe your tummy further, add a pinch of baking soda to your coffee grounds upon brewing. It cuts down on coffee’s acid. I do it! I like it! It works!

GUILT - WHAT IS IT?

I have an enormous problem with feelings of guilt. I’m convinced it’s the bane of my existence—my chief obstacle in life. I rationalize away too many good hours of my days in service to this insidious structure of my ego. I want to break its hold on me. But how? I can’t afford a psychotherapist. Maybe the Catholics have it right—maybe confession is good for the soul! I think I’ll try it. So here goes: 

I suck at the art of relaxation and when I try to relax, I feel guilty about it even though in an out-of-reach region of my consciousness, I know it’s a beneficial thing. But tell that to my ego! Tell that slavedriver that not every moment must have a purpose, some useful something attached to it. 

Sometimes I just feel lazy. Ahhh, laziness—not the same as constructive relaxation at all, but a SIN! If you don’t believe me on this point, ask M. Scott Peck, M. D., who wrote the definitive exposé on laziness in his groundbreaking book, People of the Lie. He theorized that laziness is mankind’s greatest evil…that it IS the very DNA of evil. My poor mother, God Bless Her Departed Soul, could only justify her need for this evil by feigning illness and going to her bed for a few hours in a week, or so. My God, I’ve become my mother and one of Peck’s reprobates! 

I’ve made mistakes with my kids—little mistakes and big mistakes. I still do. Those are the guilts that bore treacherous, black holes in my mind and heart into which I most often plummet…and yes, I lose myself there. My ego loves those plunges most of all because there’s no end to the ego’s guilt-affirming, mind-chatter there. 

Sometimes I gossip! Shame! Shame! Shame! There really is no excuse for it, but still I do it on occasion even while one part of my brain is berating me for my indulgence while the other is joyfully partaking of it. The gossiper-me is like a food addict licking a huge dome of vanilla ice cream, my taste buds blindly welcoming as an honored guest the fat cells accumulating on my behind. And thereafter for days, I feel dreadful about the gossiping and the ice cream orgy. 

Sometimes, and sometimes for very long stretches of time, I just don’t want to write, and especially to market my writing. There’s no limit to my guilt related to that one because it’s directly centered on God, no less! Why, you ask? Well, because God sent me here to be a writer; it’s my purpose in this life, my ticket into this particular incarnation—and I have the unmitigated gall to ignore that agenda, to squander my gift, to thumb my nose at God!!! 

There just is no hope for me. Guilt has me in a firm grip and it won’t let go. But wait a minute! I think I do feel a slight easing of my conscience. Wow! This coming clean really works. 

Maybe you’d like to try it. Oh come on. You can do it. There’s a blank space just below with your name on it. Only you and I will ever know—I promise!

YOU SAY TOMATO, I SAY TOMAHTO

I didn’t plant tomatoes this season, but at summer’s end, little bundles of them in paper or plastic bags will show up at my back gate, the largesse of my sweet neighbors and friends. I am prepared for the bounty better than in previous years, because I came across an intriguing and simple recipe to preserve them found in the Spring/Summer 1995 issue of “The Cook’s Garden” catalog that has been tucked away and forgotten among my cookbooks all this time. Sadly, at least from my perspective, the “Cook’s Garden,” the mail-order and seed supply house of Londonderry, Vermont has since been assimilated into the W. Atlee Burpee Company. I am therefore, so happy to still have in my possession this edition of the catalog as a memento of the innovative and famous organic growers' enterprise.              

Founder of the “Cook’s Garden” and author of the catalog Shepherd Ogden writes that this recipe for oven-dried tomatoes promises to be as good as anything found in a store. A further benefit is that it is so easy to prepare. Once properly dried, the tomatoes will keep in the refrigerator for several months, to be used as the base for tomato sauce, tomato-based soups, topping on pizza, tomato powder, tomato chips, and tomato pesto. Rehydrate the tomatoes by marinating in a bit of salad dressing and then enjoy them in salads or on sandwiches. 

These dehydrated wonders are good to have on hand to perk up your dishes throughout the year, even during winter. 

OVEN-DRIED TOMATOES

4 pints of Principe Borghese or San Marzano tomatoes or other Roma heirloom varieties
1 tbsp. sea salt
2 cups fresh basil leaves
1 cup olive oil
2 sterilized jars (pint-sized canning jars with lids and seals, or canning jars with self-sealing lids) 

Preheat oven to 150° F

Slice tomatoes in half lengthwise. Scoop out seeds. Place on cookie sheets, flat side up. Sprinkle lightly with sea salt. 

Set in a warm oven. When tomatoes are completely dry (12 to 24 hours), pack in pint jars, alternating with a layer of basil leaves. Continue to build layers of tomatoes and basil leaves, and at the top of the jars, drizzle in olive oil until all contents are coated. Place in the refrigerator where the tomatoes will stay fresh for several months.

Bake Up Something Good

At my advanced age, a ‘mushy’ bottom pretty much comes with the territory. But to save your baked-goods from the same fate, there is a little trick you can use as a deterrent. Keep reading to find it.

Several months ago, I learned that victims of thyroid disorder, which I have been since the age of 16, should adopt a gluten-free diet. Carbs are also a problem for me. I looked around for a nutrition plan that would best suit my needs. I found it in the Keto Diet. A side benefit is that I am losing weight on this easy diet plan. Now when I look in the mirror, I see promise of the svelte and fit creature I was when young. It is a tremendous incentive to keep on keeping on.

A favorite gluten-free, low calorie, low carbs, high protein dessert that I stumbled upon by fooling with a recipe in Keto in 30 Minutes, edited by Jen Fisch of Ketointhecity.com, is one I call ‘Blueberry-Blackberry Cobbler’. I treat myself to a filling and satisfying 2-inch square of it drenched in icy-cold, Aldis’s Friendly Farms Original 30 calories per cup almond milk on many late evenings. Blue Diamond almond milk is also a good one. Neither of them is thick and greasy like Silk almond milk. Coconut milk works, if it is your preference. And no, this dessert will not go to your hips, unless of course, you gobble down the whole thing in one sitting.

Blueberry-Blackberry Cobbler
¼ cup gluten-cholesterol-sugar-free coconut flour
4 large eggs
4 oz. cream cheese, softened, I prefer Neufchatel, it contains less fat and has a tangy bite to it
1½ tsp. baking powder
¼ cup Erythritol or three packets of Stevia, plant-based, sugar-free sweeteners
1 tsp. vanilla extract (organic, if possible)
1 tbsp. lemon zest (I use four drops of ‘Young Living’ essential lemon oil)

Nonstick butter cooking spray
4 pats butter
¼ cup blueberries
¼ cup blackberries

Pre-heat oven to 425º F.

Combine all ingredients before cooking spray together in a mixing bowl.

Coat the sides and bottom of an 8-inch. x 8-inch baking dish with cooking spray.

Place a thin pat of butter in each corner of the baking dish. Set dish in the oven until butter melt, about 2 – 3 minutes.

The thick batter spoons nicely into the warm baking dish. Now here is the trick to avoid turning your cobbler into a ‘mushy-bottomed-mess.’ Rather than mix your fruit into the batter, spoon blueberries and blackberries onto the top of the batter. You can use any fruit you choose, but be careful, most fruits outside the berry family are high in carbs and will go to your hips.

Bake about 20 minutes.

I whip up this delicious dessert in the evening so I can cut myself a warm square of it right out of the oven. It is a yummy soother to a gnarling, late-night tummy.

SAVE THE LIFE OF AN AUTHOR

It is a fact that “Muse,” that mysterious and severe task-master chains authors to their writing instruments for weeks, or months, and sometimes years at a time. They aren’t allowed to eat, or brush their teeth, or bathe, or sleep. They almost never get to see other human beings. Muse makes them ignore the ring of the doorbell and the phone, and pull the drapes and close the blinds. Nothing, nothing, nothing must get in the way of scratching down those precious lines. At long last the book is done—finished—complete! And authors wait; they wait; they wait for feedback from readers, feedback that is the lifeblood of writers, that keeps them motivated, that keeps them sane, that rescues their self-esteem, and that very well might save their life!

Accumulating reader reviews of books is a huge hurdle for authors, and the truth is that without reviews, books don’t stand a chance of reaching a wide audience, even though they might be very worthwhile reads. Nowadays, by way of cyberspace, something like 4,500 new books per day hit the bookseller market, a large percentage of that number written and self-published by highly talented and fearless authors. The crushing heap of competition they are under demands that many good reviews on Amazon and/or Goodreads is the best, and perhaps, the only way they can crawl out from under the pile and receive the notice they deserve.

A lot of readers would like to post reviews but feel intimidated by the process. You’re in luck. You can write something as simple as “I loved it!” or “This is one of the best books I’ve ever read!” or “I couldn’t put it down!” If you didn’t like the book, explain the reason in the review because that’s information the author needs to be a better writer.

Please support authors by posting reviews of their books, especially at Amazon.com. All you have to do is go to Amazon and type in the name of the book. When the correct page comes up, click onto the space on the right indicating the number of current reviews. The reviews page comes up. You will see a series of five stars on the left side of the page. Click onto the star that corresponds with your rating of the book. The fifth star on the right indicates the highest rating. A dialog box in which to type your review is directly below the stars. And below that, a box shows in which to title your review. STAY TOASTY WARM

Winter, and especially the high-holiday season that is winter’s centerpiece, brings with it for me an air of nostalgia, a wistfulness for the Thanksgiving Days of old, the days when at the end of a long country lane, the white square farmhouse of my maternal grandparents came into view, and within its walls my large family would soon gather around an immense table groaning with a homegrown Thanksgiving meal. With the elapsing of time, the torch has passed to my aunts and uncles, and then to the members of my generation. The work of keeping the traditions of our family alive and well continues to be handed down.

This past Thanksgiving my immediate family gathered at the home of my daughter, Elizabeth, the person who often as not, has hosted our celebration for several years. I am so grateful for the young people of my family, and for the time and space to hunker into the winter of my life, to gather my provisions, as well as to relax into my unbound hours and make the most of them.

Turkey and dressing, mashed potatoes and gravy, sweet potatoes, cranberries, and several other side dishes, sweetened at meal’s end with pumpkin pie and whipped cream, and a wide selection of additional heavenly desserts was our traditional fare. Last year, we broadened our menu with some new dishes. My contribution was a lovely ‘Farmhouse Cheese Soup’ laid at table as an appetizer. The recipe comes from Stacey Pirtle of ‘Southern Discourse,’ where it is described as “…oogey, gooey, goodness…a zesty comfort food even the pickiest eaters will enjoy.”

Savory Farmhouse Cheese Soup
1 stick (½ cup) butter
⅓ cup onion, diced
⅓ cup carrots, diced
⅓ cup celery, diced
1 tsp. garlic, minced
32 oz. chicken broth (I prefer the low-sodium brands)
½ cup roasted red peppers, diced
1 cup of Chardonnay, optional
6 cups sharp cheddar cheese, grated
6 cups of half-and-half
2 tsp. paprika
1½ tsp. fresh thyme, chopped
1 tsp. salt
1 tsp. white pepper
Bacon bits
French bread, small chunks

Melt butter in a large stockpot or automatic cooker over medium-low heat. Add onions, carrots, celery, and garlic. Cook until vegetables are translucent.

Add broth and peppers. Simmer about 5 minutes. Pour in Chardonnay and simmer for 10 to 15 minutes.

Add cheddar cheese, 1 cup at a time, and stir well after each cup until cheese is melted. Blend in half-and-half a little at a time, stirring continuously.

Stir in paprika, thyme, salt, and white pepper. Cook on very low heat for another 5 to 10 minutes, stirring every 2 to 3 minutes.

Sprinkle bacon bits on top of each savory bowl. Sprinkle on bread. Shredded chicken is a nice add-in. Enjoy!
