Tis the Season to Go Dutch

You sure work up an appetite fighting fascism, saving the world, and helping out the Dutch Resistance. In my newest time travel adventure, The Last Timekeepers and the Dark Secret, my characters got to taste some of basic Dutch food such as cheese, bread, and fish (herring) stew. Yum. It’s too bad the time travelers didn’t get to check out some of the must-try Dutch treats while they were in Amsterdam during 1942, but they had bigger fish to fry, and a Timekeeper mission to complete. So, I thought I’d compile a list of some Dutch goodies in case you ever get a chance to visit the Netherlands.

Stamppot: One of the best-known Dutch dishes is stamppot, an old-style Dutch dish. It is made of mashed potatoes mixed with one or more vegetables like kale, carrots, endive or sauerkraut. Stamppot is traditionally served during the winter and enjoyed best with rookworst (smoked sausage).

Broodje kroket: The ‘kroket’ is a deep-fried roll with meat ragout inside, covered in breadcrumbs. The original Dutch ‘kroket’ is made from beef or veal, but there are many different flavors like chicken satay, shrimps, goulash or even a vegetarian ‘kroket’. You can eat a ‘kroket’ as a snack, but most of the time they are served on sliced white bread or hamburger buns with mustard on the side—even fancy restaurants serve them. Caution: the ‘kroket’ can be extremely hot inside.

Bitterballen: Translated as bitter balls When you go for drinks or visit a birthday party it is most likely that these little, round, often dangerously hot snacks are served.  They are battered in a crunchy breadcrumb coating and filled with a gooey mixture of chopped beef, beef broth, flour, butter, herbs and spices. They are typically served with mustard for dipping. The red-white-and-blue flag is also nearly mandatory while serving them!

Stroopwafel: This delicious chewy cookie the stroopwafel—translated as a syrup waffle—was first made in the town of Gouda in the Netherlands during the 18th century. In fact, until 1870 stroopwafels were made only in Gouda and there were about 100 bakeries selling these treats in that city alone. This sweet waffle made from two thin layers of batter with a sticky syrup filling in the middle. They can be purchased in packages at nearly every grocery store and bakery in the Netherlands, as well as freshly made at street stands at markets and festivals.

And this food choice somehow made me cringe…

Fries (Patatje Oorlog): While fries are popular in nearly every corner of the world, in the Netherlands they eat them with everything on it. And with everything they mean Patatje Oorlog (Fries like War). Fries with peanut butter, sauce, ketchup, mayo, onions and if you wish, you can put curry on it too! Um…I think I’ll stick to gravy or ketchup.

These treats are just a sampling of what the Dutch have to offer. So why not try something a little different and go Dutch for the upcoming holiday season? Do any of these foods whet your appetite? BECOME A PROFILER

We’ve all heard it. Zero in on your target audience. Build your author platform according to who you’re writing for. Sage advice for sure. Books without identifiable potential readers do not sell. Let me repeat that. If you don’t have target market in mind—who you gonna call? To avoid creating a manuscript no one wants, successful writers consider who will read the fruits of their labors. They know their market, and that’s who they write for.

One of the most frequent mistakes made by beginner writers—a step above the writer who does not even bother to look at the publisher’s guidelines—is to assume that EVERYONE will enjoy what they write. You have to decide early on what posse you belong with. Pick your tribe, pick your team, pick where you roll. 

A great first step toward knowing your readers is learning what they already like. Read what they read. Check book reviews. Go over the bestseller lists. What needs do these books fill? Who are the main characters? What emotions are dealt with in the story? Once done, you can find the parts that appeal to your strengths as a writer and your likes as a person, to make sure that your book is not just another version of a successful series, but rather a fresher, more vibrant work. 

Probably the most important rule in writing is to know your readers, but do not become so obsessed with them that they interfere with your writing what you love. Let’s face it most of us start with ideas, not readers. Awareness is the key here. Perhaps the best way to start creating a reader profile is to start with your idea, and go through these series of questions: Who will this interest? Who will this help? Who needs to know this? Who wants to know this? Once you’ve answered those questions, you can start to identify the type of reader who will benefit.

And believe me, if your readers benefit, then you’ll benefit.

Comfort Food Italian Style

An Italian dish full of sausage and veggies that’s guaranteed to put a smile on your face, and a napkin on your lap. The preparation takes about half an hour, with a bake time of 25 minutes, a setting time of 10 minutes, and serves ten of your hungriest family or friends. This hearty meal is ideal for those weekend warriors set to do some renovations at their home or cottage. Serve with a side salad, garlic bread, and your choice of wine, and you’ve got the makings of a trip to Italy without leaving the comforts of your home.

Potluck Penne and Sausage Casserole

16 ounces penne pasta

1 lb. bulk Italian sausage

1 tbsp. butter

1 tbsp. olive oil

1 medium onion, finely chopped

1 medium carrot, finely chopped

1½ tsp. dried oregano

1 tsp. salt

½ tsp. pepper

1 small zucchini, halved lengthwise and sliced

1 cup chopped fresh mushrooms

6 garlic cloves, minced

15 oz. tomato sauce14 oz. pasta sauce with meat

2 cups shredded part-skimmed mozzarella cheese

Preheat oven to 350° F.

Cook pasta according to package directions for al dente; drain and transfer to greased 13 x 9 inch baking dish.

Fry sausage in a large skillet over medium heat until no longer pink, about 6-8 minutes, breaking into crumbles. Drain and remove from pan.

In same skillet, heat butter and oil over medium-high heat. Add onion, carrot, oregano, salt and pepper. Cook 5 minutes and stir frequently. Add zucchini, mushroom and garlic. Cook 6 – 8 minutes or until vegetables are tender. Be sure to stir often.

Add tomato sauce, pasta sauce, and sausage. Pour the mixture over pasta. Sprinkle with cheese.

Cover casserole with foil coated with cooking spray. Bake 10 minutes. Uncover. Bake until golden brown and cheese is melted, 15-20 minutes longer. Let stand 10 minutes before serving.

Once dinner is done, and you’ve had your last sip of wine, I’m sure you’ll be ready to escape into your living room for some much-needed quiet time. Why not make a cup of tea, then relax with one of my books? May I suggest a nostalgic visit to Fairy Falls or perhaps go back in time with The Last Timekeepers? Just remember to breathe once in a while as you’re being led on a bumpy, unpredictable ride along with my characters.

A Bit of Heaven

A real crowd pleaser at small gatherings such as book clubs or intimate bridal and baby showers, this chocolatey, sweet treat will tempt even the most disciplined of us. If cherry is your go-to fruit that makes your mouth think you’ve swallowed a piece of heaven, then read on if you dare to concoct this sinful chunk of bliss.

CHOCOLATE CHERRY CHUNK LOAF

A bit of butter for greasing the loaf pan 

1¼ cups + 1 tsp. all-purpose plain flour 

¼ cup cocoa 

2 tsp. baking powder 

¼ tsp. salt 

¾ cup granulated or caster sugar 

1 cup cherry yogurt 3 large eggs lightly beaten 

1 tsp. vanilla ½ cup mild vegetable oil 

1 cup cherries 

¼ cup sweet chocolate chips 

1 cup walnuts, chopped, use less if you prefer

Preheat oven to 350° F (175° C or 165° for fan ovens, Gas Mark 4).

Grease a 2 lb. (8 ½ x 4 ¼ x 2 ½ inch) loaf pan.

Remove the pits from the cherries and cut each one in half. Place cherries in a small bowl, sprinkle the 1 teaspoon flour over top and toss gently.

Sift 1¼ cups flour, cocoa, baking powder, and salt into a medium bowl.

Stir in sugar, chocolate chips, and walnuts. Set dry ingredients aside.

In a large bowl, whisk together yogurt, eggs, vanilla, and oil.

Add yogurt mixture to dry ingredients. Beat with a wooden spoon until all the flour is mixed in and the batter is smooth.

Gently fold in the flour-coated cherries.

Pour batter into prepared loaf pan. Bake for 40-50 minutes or until cake tester inserted in the center of the cake comes out clean.

Cool in pan for 20 minutes, then remove cake and place it on a wire rack to cool completely.

 THE GLAZE

1 cup icing sugar, confectioner’s sugar 

2 tbsp. maraschino cherry juice 

1 tbsp. water 

Drop of pink food coloring, optional

Pour icing sugar into a bowl. Whisk in maraschino cherry juice.

Gradually whisk in water, a drop or two at a time, until a smooth, drizzle-able consistency is reached.

Whisk in food coloring, if using.

While you’re waiting on your loaf to bake and cool, how about taking a break by delving into one of my books? CELEBRATE FAMILY & FRIENDS

Summer is here! Kids have big smiles, and adults are gearing up for parties with their loved ones. The anticipation of being with family and friends deserves a festive appetizer. So, juice up your taste buds and dive into my easy to make spicy dip.

Family Fiesta Dip

250g package of cream cheese (soft)

1 tbsp. margarine

½ cup of mayonnaise

1 small jar of salsa (vegetable chunk style)
1 medium red pepper, finely chopped
1 medium green pepper, finely chopped
1 medium tomato, finely chopped
3 green onions, finely chopped
1 cup shredded cheese of your choice (I prefer the nacho or tex-mex brand)
1 bag of Tortilla chips

Mix cream cheese, margarine, and mayonnaise until smooth. Spread in a medium-sized dish with edges to prevent spill over.

Cover with salsa – not too much so it’s not runny.

Layer as follows: chopped red pepper, chopped green pepper, chopped tomato, chopped green onions, and then top with shredded cheese.

Refrigerate before serving. Serve with tortilla chips (and napkins).
