and a Recipe for Perfect English Muffins

You don’t have to be British to enjoy hand-made English muffins, which is fortunate for the heroine in our young adult novel, The SkyHorse, since Tovi Taggert and her family are southerners through and through.
The Taggerts are also fans of fun, easy menu additions for Sunday morning brunch or a special breakfast. English muffins are a snap to prepare, require only an hour to rise, cook quickly on a griddle or frying pan (no heating the oven!) and taste great, either plain or with butter, jam, or your favorite topping. An added bonus is the delicious, yeasty scent of fresh bread that fills the kitchen.
Here are tips to help you make perfect muffins.
1. While the yeast is dissolving, fill a 13” x 9” pan with hot water and place it in your unheated oven. Muffins rise best in a warm, humid environment.
2. If your recipe calls for honey, spritz your measuring spoon with cooking spray. The honey will slide right off the spoon.
3. Instead of using a rolling pin and cookie cutter to form your muffins, divide the dough into even parts. Then press out the dough pieces in your hamburger patty mold. You’ll get just-the-right-size, perfectly round muffins.
4. Once your muffins have risen, hand-transfer them to the heated griddle. They’ll keep their shape better than if you try to slip a spatula beneath them.
(Bonus tip: Prefer using a spatula? Dip the edge in cornmeal so it slides easily under the muffins.)
5. To test for doneness, lightly tap the top of the muffins with your fingertip. A hollow sound means your muffins are cooked.
6. When you’re ready to toast, split the muffins with a fork instead of a knife. Your toppings will fill the resulting nooks and crannies.
And here’s the perfect recipe for Perfect English muffins.
What you’ll need:
2-3 quart bowl
Standard-size cookie sheet
Griddle or frying pan
1 package yeast
1 cup warm water
3 cups flour (all-purpose or whole wheat)
3/4 cup shortening
2 tablespoons honey
1 teaspoon salt
Cornmeal
Dissolve yeast in bowl in warm water for five minutes. While yeast is dissolving, sprinkle cookie sheet with a light coating of cornmeal.
Add flour, shortening, honey and salt to yeast-and-water-mixture to form dough.
Coat dough with flour; knead until elastic.
Divide dough into 12 equal balls. Use a hamburger patty mold or the flat end of a glass dipped in flour or sprayed with cooking spray to flatten each ball into a 3-inch circle. Put the muffins on the cookie sheet as you form them.
Cover the cookie sheet and let the muffins rise for an hour.
Heat the griddle or frying pan to 375 degrees (no oil necessary).
Cook the muffins, turning once, until golden brown on both sides.
Split with a fork, toast, and enjoy with your favorite topping.

GOOD SUMMER EATING
Summer is here and it's time to eat gobs of ice cream and not feel guilty. So today HL Carpenter shares the delicious recipe for No Bake Ice Cream Sandwich Cake. Take it away, HL!
We wish we could say Gramma shared the recipe for this scrumptious dessert with us while we were writing The SkyHorse. After all, what better way for her granddaughter, Tovi, to stay cool on a sweltering summer day while tending a horse hatched from an egg? But we must admit the sweet treat was around long before The SkyHorse trotted into our lives.
If you like to have dessert on hand for those daily ice cream cravings guests, this cake keeps well in the freezer. It’s expandable, too. Just use a bigger pan, more ice cream and extra whipped topping. When it comes to ice cream, more is better, right?
No Bake Ice Cream Sandwich Cake
What you’ll need:
One package (12 bars) of ice cream sandwiches
One container (8 ounces or larger) of whipped topping (or make your own with a pint of whipping cream and 3 tablespoons of sugar)
Garnish of your choice: Sprinkles; chopped nuts; caramel, chocolate or other syrup
Glass or plastic pan with a lid
Directions:
Arrange six ice cream bars in a crisscross pattern in the bottom of the pan. (You may have to cut the bars to make them fit. Of course, then you’ll need to eat those little left-over pieces—who said chefs have an easy life?)
Spread a layer of whipped cream over the bars.*
Crisscross the remaining six ice cream bars on top of the whipped cream.
Slather another layer of whipped cream over the top and sides.
Decorate with sprinkles or chopped nuts, or drizzle with caramel or chocolate syrup.
Cover and freeze 2-3 hours or overnight.
Remove from freezer 10-15 minutes before serving to soften.
*For a richer cake, add a layer of syrup and/or chopped nuts over the whipped cream.

Alexandra Tallis gulped. She was doing her best not to look at the near-naked man half-hidden in the shadows. But her eyes refused to behave. Stripped to the waist he was a wondrous sight, all muscle and taut sinew. His arms tensed and strained as he struggled to escape.
“Get me out of here,” he snarled.
Alexandra blinked and looked more closely, but her eyesight was not the best. She lifted a candle from the wall sconce and took a step forward. And another.
“You’re bleeding!”
He swiveled his head to look in her direction. “Sense at last. Yes, I’m bleeding. I’d be obliged if you’d free me from these bl—these ridiculous bonds.” There was a clank and rattle as he tried to move.
Gracious! Emmaline hadn’t just tied the man up—she had chained him. Alexandra closed her eyes for a few seconds.
“Emmaline! How on earth did you manage—?”
“Davy did it for me. Well, he would fight, so Davy had to subdue him.”
“What did that witless boy do? Shoot the poor man?”
“Yes, actually. He did,” the man muttered.

Reading Feeds the Soul

For the last year, I had been part of conference committee and I also began studying. So much of my spare time was tied up with those activities that I noticed that my reading had gone downhill. My current reads are at 25 for 2012 whereas in 2011 I had read 74 books. That’s quite a difference. Please check out my reading list at Eleni’s Library.
The other thing I noticed was I felt down that I couldn’t get more reading done. Gone were the days when I used to read all night. With chronic fatigue syndrome, if I’m tired, I can’t read past a few pages.
That is very sad. Don’t you think?
I’m of the belief that reading feeds the soul, especially the writer’s soul. Nothing is like escaping into a book, reading about events and characters as if it were happening right in front of you. And when that isn’t happening - it’s like losing a piece of yourself.
I was finding that my own writing and creativity suffered because of this. I couldn’t really get settled into my work. Editing was fine (thank goodness because I had releases to work on), but writing something new felt stifled. No new idea grabbed hold or felt right.
However for the first time in months, I wrote something new the other day. It’s different, and still forming, but I like the basic idea.
Why the change?
Conference is over for 2012, I dropped a couple of subjects at school and I’ve started reading more again. In the last month, I have read six stories. Not all of them were novel length, but it’s still more reading than I’ve done for ages. I feel so much better for it.
My muse is rubbing her hands together and saying, “Yes, we can work on this and this, and that. Oh, and this one as well.”
It’s a good feeling to have choices for writing after a year where it really didn’t seem to.

New Series - New Release

Her knees shook as she climbed down the ladder. She hadn’t faced Zane DeMonde in nearly fifteen years. At one time she’d believed he’d be part of every single day of her future.
“Zane, I didn’t expect you to come.” She stepped toward him. His black hair was a little shorter than the last time she’d seen him, but at shoulder length it was still far longer than most men’s. Gone were the black hoodie and ripped jeans of his youth. Now he wore chinos and a sharply pressed blue button-down shirt, open at the neck.
The dark storms in his cobalt blue eyes were exactly the same as the day he’d walked away from her. “Cancel the auction. The sketches and painting are not for sale.”
She swallowed. “I own them. If I choose to sell them, that’s my business.” And it was breaking her heart to part with the only piece of him that she’d been able to hang onto all these years.
“When they have my name on them and you’re getting rich off me, it’s my business.”
Getting rich was so far from the truth Julianne would have laughed if her chest weren’t so tight. “It’s an honor to have you back in town.” At least her students would think so. Her brother would likely burst an artery. And she—well, she couldn’t even begin to process the mix of emotions she was feeling. “Do you have a minute to talk? I can explain what’s going on.”
“I know what’s going on.”
She hoped he couldn’t hear how hard her heart was hammering or sense how desperately she longed to wrap her arms around him and pick up where they left off fifteen years ago, as if he’d never left her. “Then you know that the arts are at the bottom of the school district’s priority list. To have supplies for the classroom, to restore the school mural, to give my students a chance to explore different mediums, the art program needs an alternate source of funding.”
“You’re the Dentonville High art teacher?”
She couldn’t help feeling defensive at his derisive tone. “Yes, and I love my job.”
“Do you? Or have you never moved beyond your high school life?”

Early this year when Musa posted a submissions call for a series called Finally Ever After, I jumped at the opportunity. The stories were to be short, happily ever romances about lovers who have loved each other and lost. Now, they have a second chance to create the happy ending they didn’t get the first time.
I love characters with a past history, especially in a short word count. They have instant attraction and long-standing unresolved conflict—the perfect elements for a fast-paced, emotion-packed read. Zane’s Art had all these things coupled with a strong present conflict. The story flowed out of me so fast I knew it was meant to be!

HAPPY HALLOWEEN!
Lena Austin is not only a talented author of many genres, she is also a marvelous cook. Below is her fun recipe for all your Trick or Treaters of any age.
BLUE SLIME
One six-ounce package blueberry flavored gelatin
2 cups boiling water
4 cups cold water
3 cups lemonade, chilled
3 cups lemon-lime carbonated beverage, chilled
In a large mixing bowl, combine gelatin and two cups boiling water; stir until dissolved.
Stir in cold water. Cover and chill at least four hours. Gelatin will be partially set.
To serve, stir gelatin with a large spoon, fork, or wire whisk until gelatin is broken into small pieces.
Place ¼ cup of the lemonade in a large, clear glass or plastic tumbler. Add ½ cup of the gelatin to the lemonade, then add ¼ cup of the carbonated beverage.
Stir slightly and you're ready to slurp some slime. Do not over-stir.
Makes 12 servings.
