A Touch of Italy - Easy and Delicious

This recipe makes two generous portions. It’s nice served with a green salad and some crusty bread. A little red wine is a bonus.

Easy Tomato & Bacon Pasta Bake

4 rashers (slices) thick bacon, chopped into bite-sized pieces
1-2 tbsp. olive oil
300gm (10oz) dried pasta shapes. Penne works well.
1 large onion, chopped
3 garlic cloves, crushed
400gm (14oz) tin of plum tomatoes, roughly chopped
125 ml (4oz) red wine
Small bunch of fresh basil leaves, roughly chopped
Salt and pepper to taste
110 gm (4oz) Parmesan cheese, grated, or mozzarella, sliced

Preheat oven to 180C or 350°F.

Fry bacon in a little oil and put aside.

Cook the pasta in boiling water for the prescribed time on the packet.

In a large pan gently fry the onion and garlic in olive oil for a few minutes until soft and transparent.

Add tomatoes, wine, cooked bacon pieces, and most of the chopped basil (retaining a little for garnish). Season well with salt and pepper.

Simmer gently for five to ten minutes until the sauce has thickened slightly.

Combined the drained pasta and tomato mixture and turn in to an ovenproof dish.

Sprinkle with cheese and scatter the remaining basil on the top. Bake for 10 to 15 minutes, or until the cheese is melted and bubbling.

Candlelight Supper at Its Best

This easy recipe, that serves two, is ideal for Valentine's Day dinner with your special someone. Add a crisp salad, dry white wine, and candles then let romance flow.

ROMANTIC RISOTTO
75g (3oz.) butter
1 small onion, chopped
3 cloves garlic, crushed or finely chopped
200g (7oz.) Arborio risotto rice
150ml (5 oz.) white wine
75g (3oz.) mushrooms, cleaned and sliced
A few sprigs of fresh thyme leaves, stripped from the stalks
500ml (18oz.) fish or chicken stock
1 lemon
100g (4oz.) green string beans, cooked and halved
200g (7oz.) prawns (large shrimp), peeled and cooked
3 - 4 thin slices of salami or chorizo, chopped, for garnish
1 sprig of basil for decoration

Melt half the butter in a large saucepan and sauté the onion and garlic for about 3-4 minutes over a moderate heat.

Stir in the rice and mix well to coat the grains with the onion mixture.

Add the wine, mushrooms, and thyme. Stir well. Let the wine bubble and evaporate for a few seconds then stir in a ladle of stock. Cook gently until the moisture has been absorbed by the rice. Add the rest of the stock, a ladle at a time, making sure all the liquid is absorbed between additions. Stir frequently to prevent the rice sticking to the bottom of the pan. This process should take about fifteen to twenty minutes. Taste the risotto. The mixture should be a moist texture and the rice tender.

Stir in the rest of the butter, juice from half the lemon, beans, and prawns. Take a few seconds to warm everything through then turn off the heat. Place a lid on the saucepan and let the risotto stand for a few minutes before serving.

Meanwhile fry the meat until crisp and use as a garnish for the risotto

Serve with a wedge of lemon.

Carrot Cake or Carrot Sticks? No Contest!

The habit of afternoon tea and cake has come back into fashion with a vengeance.

Thanks to the explosion of bake-offs and celebrity chef programmes, baking cakes is big business. Never has the cup cake, Victoria sponge or biscuit been given so many media makeovers — despite the gym gurus and the calorie police. I love cake, but it’s a struggle balancing; bake-offs v gym workout, carrot sticks v carrot cake, bathroom scales v kitchen scales… and so on.

So, here is my favourite cake recipe. It’s full of off happy healthy carrots. And, if you want to implement further calorie control, the cake is equally delicious without the frosting. Great for afternoon tea, morning coffee, or just when you need some T.L.C.

Carrot Comfort Cake
200g or 7oz. just over ¾ cup plain flour
200g or 7oz. just over ¾ cup brown sugar
200g or 7oz. just over ¾ cup grated carrots
2-3 mashed, ripe bananas, depending on size
120 ml of sunflower oil
100g or just under ½ cup sultanas
100g or just under ½ cup chopped nuts, walnuts, pecans, Brazils, almonds - or a mixture of your preference
2 tsp. baking powder
1 tsp. bicarbonate of soda (baking soda)
3 eggs
20 cm wide, or 8”, spring based/loose based, round cake tin

Pre-heat oven to 170°C or 340° F

Grease cake tin. If you use a tin without a loose base, cut out a round of greaseproof paper and line the base to prevent sticking.

Whisk the eggs and sugar until thick and creamy. Sift together the flour, baking powder and bicarbonate of soda, and then stir into egg mixture.

Add the nuts, oil, sultanas and carrots and stir well. Finally add the mashed banana and make sure everything is evenly combined.

Pour into the prepared tin. Bake for about 1 hr – 1hr 15 mins.

Test the cake is done by inserting a skewer or thin bladed knife into the middle. It should come out clean.

When the cake has cooled, either dust the top with sifted icing sugar, Confectioner’s sugar, or top with an easy cream cheese frosting (as pictured).

Cream Cheese Frosting
100g or 4oz. cream cheese
50g or 2tbsp. soft butter
200-250g or ¾ - 1 cup icing sugar or Confectioner’s sugar

Beat together cream cheese and butter.

Add enough icing sugar until you reach a soft spreading consistency.

Carefully swirl on top of cooled cake with palette knife.

Easy Comfort Food

My British friend, author Susan Lodge, is here with a delicious recipe that I make even when I have time to cook. The kitchen is all yours, Suze.

The world moves faster now and we all have time crunches that take away from home cooking. But here is the perfect meal for when you are really pressed to feed the family.

Quick Pasta Bake
300gm (10oz) dried pasta Penne works well

110 gm (4oz) of hard cheese grated or mozzarella sliced.
Salt to taste
Pepper to taste

Preheat oven to 180°C or 350°F.

Cook the pasta for the prescribed time on the packet.

Add tomatoes, water/wine, bacon, and mixed herbs. Season with salt and pepper.

Simmer gently for five to ten minutes until the sauce has thickened slightly.

Combine the drained pasta and tomato mixture and turn in to an oven proof dish.
Sprinkle with cheese and bake ten minutes, or until the cheese is melted and bubbling.

Nice served with a green salad and some crusty bread.

She loves writing contemporary and historical romance, usually with a large dose of humour. Susan believes the romance genre lends itself superbly to funny moments, as love can make people act very oddly.

Susan has a science degree and always wanted to be an astronaut, but instead spent most of her career in the Civil Service. She would love to secure a seat on Richard Branson’s space flight. However, to find the funds she needs to either write a best seller or win the lottery.
