Complete Comfort Food Dinner

From Erise Field

It's so easy to misplace things, well it is for me, so I thought I should share this recipe for a great meatloaf dinner before I lost it.

Meatloaf Veggie Dinner
1 lb. ground beef
1 egg, beaten
½ cup finely chopped onion
3 tbsp. ketchup
¾ tsp. salt
¼ tsp. ground pepper
½ can condensed Campbell's tomato soup
¾ cup dry breadcrumbs ( I like Italian ones)
6 small red potatoes
4 garlic cloves, optional
1 tbsp. olive oil
½ tbsp. mixed Italian herbs
Cooking spray

Meatloaf Topping
½ can condensed tomato soup
3 tbsp. Worcestershire sauce
2 tbsp. brown sugar

Combine ingredients in a small bowl then coat meatloaves with the mixture.

Preheat oven to 400° F.

Mix ingredients together, ground beef through breadcrumbs, I use my hands.  Shape into 5 small loaves and place them (not touching) onto the center of the baking pan.

Wash, dry, and cut into about ½ inch pieces potatoes with skin on.  Add garlic. Sprinkle lightly with olive oil and Italian herbs.  Set aside.

Spray a shallow baking pan big enough to hold the meatloaves in the center and a mixture of vegetables around the edges.

Bake 35 minutes.  Check to see that the meat loaves and veggies are done.  Let stand 5 minutes and serve.

Enjoy!

Allow me to share a little of my latest novel, that is close to my heart, for your reading pleasure.

My historical novel-- Lady Munevver: The Opium Merchant’s Daughter-- is set in the Victorian period as England is preparing to enter the War in the East, the Crimean War, to support the Ottoman Empire that has been invaded by Russia.  Russia’s 1853 invasion of Crimea results in three Empires—England, France, and the Ottoman Empire-- declaring war on Russia. It precipitates a disastrous marriage for Lady Munevver. It changes the world with advances in ships and military weapons, the development of the telegraph with its ability to deliver war news almost instantly, and the creation of modern nursing in Scutari Hospital.

In Surrey, England, the merchant father of beautiful but handicapped Munevver is obsessed with gaining acceptance by the Ton.  Refusing Munevver’s plea to marry her childhood love, William of Yorkshire, he arranges a marriage with James, the dissolute son of an impoverished, hard-handed Duke.

When England is drawn into the Crimean War, James joins the Light Brigade and sails to the Ottoman Empire to fight the invading Russians. After learning her husband has died in Scutari Hospital, an improvised hospital for English soldiers located across the Bosphorus from Constantinople, Munevver, terrified at what her father-in-law might do, flees England. Her destination: the ancient city of Aleppo in the eastern part of the Ottoman Empire where she hopes her uncle will shelter her in his vast trading compound.

Her escape ends in Constantinople when. the Sultan, irate at Queen Victoria’s command that he return the widow of one of her Lords, arranges a marriage for Munevver with Ari, a member of his court. Problem solved.  Munevver is now the wife of an Ottoman citizen. She is invisible.

Banished to the ancient, primitive city of Ankara, the young couple struggles to survive political intrigue, intense cold, and lack of medical care.  After Ari dies of tuberculosis, Munevver is desperate to return to Yorkshire, to her grandfather and to the man she loves, William. But how? Dare she accept the quid pro quo arrangement offered by the most powerful woman in the Ottoman Empire, the Sultan’s mother?

INTRIGUE and ROMANCE

from Eris Perese

The most famous water ways in the world are the two beautiful Straits—the Bosphorus and the Dardanelles. The Bosphorus connects the Black Sea, where Russia has ports such as Sevastopol, to the Marmar Sea.  Each year approximately 50,000 ships pass through the Bosphorus.  Grain, produce, and 3 million gallons of oil are transported through the Bosphorus each year. The Dardanelles connects the Marmara Sea to the Aegean Sea and the Mediterranean Sea and from there to the world’s shipping lanes. For hundreds of years, the Straits were under the control of the Ottoman Empire and when the Ottoman Empire became the Turkish Republic in 1923, the Straits became known as the Turkish Straits.

The Turkish Straits have long been the coveted entrance to the world for land-locked Russia. For over two hundred years, as her territory and population expanded, Russia has tried to secure warm water ports, year-round ports such as Odessa that do not freeze in the winter. Warm water ports would enable her to increase her trading capacity. In the early days, it was the Ottoman Empire that controlled the Straits, and the Ottoman Empire fought many wars to prevent Russia from capturing them and the Ottoman Empire’s capital city of Constantinople. Now it is the Republic of Turkey that controls the Straits and faces Russia’s renewed attempts to wrench control of the Straits from Turkey through invasion of the Ukraine, parts of which were once known as Crimea. Russia’s goal: capture of the port city of Odessa.

Stop the Plane and Order Me a Carriage

by Susan Lodge

Wedged in the middle seat of the middle row of a 747 for upwards of twelve hours, my mind dwelt on the fact that bobbing along in a post chaise, or swinging in a hammock below decks, could not be much more agonizing then traveling economy on a long haul flight. I used to enjoy airplanes. I could happily gaze from the window seat marveling at anything that appeared through a chink in the clouds. But one flight to Australia was a test of both mind and body.

It all starts go wrong at check in. I cannot secure a window seat, the flight is delayed and when we finally get to board...

Gripe 1. The trek through business class to get to economy.

I openly salivate over the spacious seating in business class as we are herded down the isle to steerage. The occupants of those designer cubicles tantalizingly stretch their limbs and flex their toes as we pass. I avoid their apologetic eyes and pitying smiles.

Gripe 2. Hand baggage

This appears to have evolved in the last few years from modest shoulder bag to sturdy case complete with wheels. As they are being hoisted, with a great deal of grunting and thrusting into overhead lockers that are clearly not built to accommodate them, the boarding process reduces to snail pace. Why do they need that much hand baggage ? There's not room to swing a cat let alone unpack and utilize a case full of gear.

Gripe 3. Invasion of space.

The passengers sitting either side of me have claimed the hand rests rendering me straitjacketed in seat. Even worse a rogue foot is gradually edging its way into my allotted leg space. I try to stem the steam from my ears and reflect how lucky I was on my last flight when I sat next to the perfect passenger. He was totally besotted with his female companion and they seemed to merge together in one seat- thereby leaving me a nice lot of space. Not sure what he was trying to achieve in such a restricted area. But if they were fidgeting (so to speak) they were at least being quiet about it.

Gripe 3. Reclining seats

I have the desire to lop something heavy into the seat in front when it falls back into my already limited personal space. Batman Returns is now being viewed two inches from my face. I can't focus on the screen so switch it off, put my head back and try to relax.

Gripe 4. Touch screens attached to back of seats .

I don't begrudge the small person behind using their touch screen even though they have not quite mastered the art. The incessant tattooing vibrates on the back of my head. After fifteen minutes it is clear they can find nothing to amuse them on the TV or film menus. The assault stops and I hold my breath willing them to go to sleep - but alas they have become bored and proceed to drum their feet on back of my seat. My unscheduled full body massage is now complete.

Gripe Five. Food.

I manipulate the multiple contents of tray carefully, arranging the most promising item in secure position. However as I unpack the plastic cutlery I decide to take Food off gripe list. Its arrival has caused the person in front to get their seat out of my face and the tattooing on the back of my head to stop.

There is, of course, an upside to this journey.

As the plane transports me to the other side of the world, my fellow passengers doze off. Ah bliss - I can now switch on my Kindle and in my forced confinement escape to my own private library.

Now, let's get back to the travel in Regency times. There was a particular coach journey that Esmie Elstone has nightmares about, whilst she endeavoured to escape the repercussions of an unfortunate wager.

Indulge in a bit of romantic intrigue with my latest release.

Esmie Elstone is thrown into panic when she hears of Captain Rockford’s return. But she is determined that the days of him interfering with her life are over. His ruthless meddling during his last visit had resulted in her being foisted on her aunt for a third pointless season in London.

To alleviate the boredom of society life, Esmie helps run a discreet betting enterprise under the guise of a sewing club. But there are some things you just shouldn’t wager on, and Esmie’s integrity is soon put to a dangerous test.

Richard Rockford had known Esmie almost all her life. As neighbours, her father, Admiral Elstone, had depended on Richard to keep an eye on his daughter when he was away at sea – a responsibility he had always taken on willingly. But her cruel and thoughtless actions, from the day he had left four years earlier, had shaken him. Now, he was back, and he wanted answers.

But when Esmie tumbles into a treacherous conspiracy, can he really turn his back on her?

Susan Lodge’s first publishing success was a story purchased by a major UK magazine followed by a drawer full of rejections. Finally a breakthrough gave her the confidence to seek and secure a publisher for her historical romance novels Only a Hero Will Do and Rebellious Cargo.

After working in several cities including London and Bristol, she and her husband moved down to the Hampshire coast to raise their family.

ROMANCE AT ITS FINEST

with this new release from the incomparable Suzanne G. Rogers. This beautifully written sure-to-be-bestseller is an historical romance that will touch your heart as it sweeps you away to an era long gone.

Skylar flees a family scandal in Boston, expecting assistance in society from her English relatives. Once her plans fall apart, however, she is obliged to earn money with her skills as a seamstress. Just when she’s given up on the notion of marriage, her path crosses that of a charming laborer who inexplicably sets her pulse racing.

When wealthy Joe Fiddick hits a patch of bad luck, he seizes the opportunity to do something meaningful by helping a neighbor and her pretty granddaughter with repairs to their cottage. As it turns out, he has more in common with the granddaughter than he realizes…and what they share spells disaster for their budding romance.

Will Joe and Skylar be star-crossed lovers or can the rift between them be mended?

EXCERPT
“Let’s start with the window in your workroom,” Joe said. “It can’t open and close properly because the hinges are rusted?”

Skylar nodded. “Yes. I should dearly love to have fresh air, but I cannot seem to force it open.”

He recoiled. “Insupportable! You cannot perspire over a petticoat or suffocate over a seam!”

Skylar couldn’t suppress a giggle. “Or gasp over a gown.”

His eyes crinkled at the corners. “Or faint over a fichu.”

“Or swoon over a sash.”

Joe chuckled. “Or pant over a pantaloon.”

“Or…or…become clammy over a coat.” She wrinkled her nose. “I suppose that last one wasn’t very good.”

“On the contrary, I thought it was splendid. In addition, since I’d just exhausted my cleverness, you win the game.” He made a gesture of invitation. “Will you show me to the window in question?”

“Indeed, I shall. Follow me.”

As Skylar led him into the cottage and down the hall, she had a smile on her lips. Joe was only a laborer, perhaps, but obviously he was possessed of wit as well as good looks. Even though he was poor and lowborn, she imagined he must cause quite a stir in his neighborhood.

In the workroom, Joe unlatched the window, gave it an experimental push, and peered at the hinges. “I’m going to need to pop out the pins on these hinges and sand off the rust. After a drop or two of oil, the window will give you no reason to complain.”

“I hope you’re right.”

When she leaned in closer to examine the hinges, his physical proximity made the fine hair on her forearms stand on end. Her eyes met his and for several heartbeats it was if something unspoken passed between them

She cleared her throat. “I see what you mean about the rust.”

Sweet with Just a Little Spice

from Susan Lodge

These cookies are delicious and easy to whip up for that someone special in your life.

Ginger and Coconut Cookies
Photo courtesy of Kira auf der Heide unsplash
200 g (8oz.) plain flour
1 tsp. bicarbonate of soda, baking soda
1-2 tsp. ground ginger
100 g (4oz.) desiccated coconut
100 g (4 oz.) butter, softened
100 g (4oz.) castor sugar (fine sugar)
1 egg
4 pieces (3-4oz.) preserved stem ginger, chopped
1 tbsp. icing (confectioners) sugar
Food colouring to tint icing
100g (4oz) of good quality chocolate. (optional)

Preheat oven to 180° C / 350°F.

Sift flour, bicarbonate of soda, and ground ginger together. Stir in coconut.

In another bowl combine butter and sugar. Gradually add egg until all combined to form a soft creamy mixture. (Takes only a couple of minutes with an electric mixer.)

Stir in the chopped ginger.

Fold in half the flour/coconut mix with a tablespoon. Add the rest, and using your hands form the mixture into a soft ball of dough. If the mixture is too sticky, then add a little more flour. If too firm add a little liquid from the preserved ginger jar.

Wrap the dough in cling film and let it rest for a few minutes in the fridge.

Remove cling film and lightly roll out the dough on a floured surface until ¼ inch thick. Use a biscuit cutter to make your cookie shapes. I use a heart shaped cutter for Valentine’s day. Keep the rolling pin and cutter well-floured to prevent sticking.

Lightly grease 2 baking trays with a little butter. Arrange cookies on trays leaving a couple of inches between each one, as they may spread a little. Cook for about 10 – 14 minutes. The cookies should be a light golden colour and the base firm.

When the cookies have cooled dredge with the sifted, icing (confectioner’s) sugar.

Enjoy the cookies as they are, or decorate them further with chocolate.

Break chocolate into a small bowl and melt in the microwave. Use a teaspoon to drizzle over the cookies.

Now that your cookies are ready, brew yourself a cup of tea, relax, and enjoy a peek at my latest Historical Romance while you munch away.

A Touch of Italy - Easy and Delicious

from Susan Lodge

This recipe makes two generous portions. It’s nice served with a green salad and some crusty bread. A little red wine is a bonus.

Easy Tomato & Bacon Pasta Bake
4 rashers (slices) thick bacon, chopped into bite-sized pieces
1-2 tbsp. olive oil
300gm (10oz) dried pasta shapes. Penne works well.
1 large onion, chopped
3 garlic cloves, crushed
400gm (14oz) tin of plum tomatoes, roughly chopped
125 ml (4oz) red wine
Small bunch of fresh basil leaves, roughly chopped
Salt and pepper to taste
110 gm (4oz) Parmesan cheese, grated, or mozzarella, sliced

Preheat oven to 180C or 350°F.

Fry bacon in a little oil and put aside.

Cook the pasta in boiling water for the prescribed time on the packet.

In a large pan gently fry the onion and garlic in olive oil for a few minutes until soft and transparent.

Add tomatoes, wine, cooked bacon pieces, and most of the chopped basil (retaining a little for garnish). Season well with salt and pepper.

Simmer gently for five to ten minutes until the sauce has thickened slightly.

Combined the drained pasta and tomato mixture and turn in to an ovenproof dish.

Sprinkle with cheese and scatter the remaining basil on the top. Bake for 10 to 15 minutes, or until the cheese is melted and bubbling.

Pour yourself a glass of wine, relax, and enjoy a peek at my latest Historical Romance while dinner is baking.

100g (4oz.) green string beans, cooked and halved
200g (7oz.) prawns (large shrimp), peeled and cooked
3 - 4 thin slices of salami or chorizo, chopped, for garnish
1 sprig of basil for decoration

Melt half the butter in a large saucepan and sauté the onion and garlic for about 3-4 minutes over a moderate heat.

Stir in the rice and mix well to coat the grains with the onion mixture.

Add the wine, mushrooms, and thyme. Stir well. Let the wine bubble and evaporate for a few seconds then stir in a ladle of stock. Cook gently until the moisture has been absorbed by the rice. Add the rest of the stock, a ladle at a time, making sure all the liquid is absorbed between additions. Stir frequently to prevent the rice sticking to the bottom of the pan. This process should take about fifteen to twenty minutes. Taste the risotto. The mixture should be a moist texture and the rice tender.

Stir in the rest of the butter, juice from half the lemon, beans, and prawns. Take a few seconds to warm everything through then turn off the heat. Place a lid on the saucepan and let the risotto stand for a few minutes before serving.

Meanwhile fry the meat until crisp and use as a garnish for the risotto

Serve with a wedge of lemon.

But Hetty soon realizes that Doctor Withington is not quite the stuffed shirt she had first imagined.

It was ten years ago when his father gambled away his inheritance, home, and any chance of marrying the woman he loved. So when Robert discovers Hetty gambling he takes drastic action to cure her of the habit.

Carrot Cake or Carrot Sticks? No Contest!

by Susan Lodge

The habit of afternoon tea and cake has come back into fashion with a vengeance.

Thanks to the explosion of bake-offs and celebrity chef programmes, baking cakes is big business. Never has the cup cake, Victoria sponge or biscuit been given so many media makeovers — despite the gym gurus and the calorie police. I love cake, but it’s a struggle balancing; bake-offs v gym workout, carrot sticks v carrot cake, bathroom scales v kitchen scales… and so on.

So, here is my favourite cake recipe. It’s full of off happy healthy carrots. And, if you want to implement further calorie control, the cake is equally delicious without the frosting. Great for afternoon tea, morning coffee, or just when you need some T.L.C.

Carrot Comfort Cake
200g or 7oz. just over ¾ cup plain flour
200g or 7oz. just over ¾ cup brown sugar
200g or 7oz. just over ¾ cup grated carrots
2-3 mashed, ripe bananas, depending on size
120 ml of sunflower oil
100g or just under ½ cup sultanas
100g or just under ½ cup chopped nuts, walnuts, pecans, Brazils, almonds - or a mixture of your preference
2 tsp. baking powder
1 tsp. bicarbonate of soda (baking soda)
3 eggs
20 cm wide, or 8”, spring based/loose based, round cake tin

Pre-heat oven to 170°C or 340° F

Grease cake tin. If you use a tin without a loose base, cut out a round of greaseproof paper and line the base to prevent sticking.

Whisk the eggs and sugar until thick and creamy. Sift together the flour, baking powder and bicarbonate of soda, and then stir into egg mixture.

Add the nuts, oil, sultanas and carrots and stir well. Finally add the mashed banana and make sure everything is evenly combined.

Pour into the prepared tin. Bake for about 1 hr – 1hr 15 mins.

Test the cake is done by inserting a skewer or thin bladed knife into the middle. It should come out clean.

When the cake has cooled, either dust the top with sifted icing sugar, Confectioner’s sugar, or top with an easy cream cheese frosting (as pictured).

Cream Cheese Frosting
100g or 4oz. cream cheese
50g or 2tbsp. soft butter
200-250g or ¾ - 1 cup icing sugar or Confectioner’s sugar

Beat together cream cheese and butter.

Add enough icing sugar until you reach a soft spreading consistency.

Carefully swirl on top of cooled cake with palette knife.

Enjoy!

Sailing the High Seas

My guest today is Susan Lodge, noted Regency romance author. Susan appears to have guest with her. Who do you have here, Susan?

I have brought along Hetty Avebury who is the heroine of Only a Hero Will Do. She wishes to share some advice about travelling at sea in the nineteenth century. Hetty unfortunately found herself trapped on a naval ship, uninvited and...

Excuse me, Susan. If I am not mistaken, you did say I could do this blog - after all I am the person who experienced the stressful, but enlightening, voyage and I don't want you to say anything indelicate. Perhaps you can go and arrange the refreshments. I will look after the visitors. Oh! Where are my guests precisely?

Okay, Hetty, you carry on. Trust me, they are out there listening, just talk – you’re good at that. But don’t give away too much of the plot before I come back.

Good! She has gone. Good day - are you there? Well I shall continue even though I fear my author has become quite addle brained. Did you know, dear guests, Susan’s ambition is to travel into space. Ha! What a strange thought. A coach that takes flight into the sky- without horses!

I hope she brings back some scones as I have a weakness for scones. In fact I have a few weaknesses. Gambling is one – luckily I am very good at it. My scheming family do not realize that I am able to gain funds this way. Therefore you might say it is also a strength.

Another weakness is books. I do love books! I can never get enough of the exciting informative kind (if you understand my meaning). The attendant at the library back home always examined my choices, so they were limited to the mundane. However, whilst I was at sea, Dr Withington lent me some books which were very informative.

But I must return our attentions to the purpose of this blog, where I will share some useful tips about sea travel.

So here are eight things a Regency lady needs to know about travelling (uninvited) on a naval ship in hostile waters.

1. Make sure you know which is the leeward side (the sheltered side) of the ship. It is important to know which way the wind is blowing when you are prone to seasickness. It was a shame about Doctor Withington’s coat-but luckily it was only his second best.

2. Do not stray from the quarterdeck. The stern end is the civilized end of the ship. Although it is a lot more colourful down the pointed end.

3. Prepare for your sleep to be interrupted. The ringing of the ship’s bell and the beating of drums occur at regular and unsociable times.

4. Do not complain of boredom, believe me that is a good sign. If you see a French ship approaching things will get very unpleasant, and you will soon wish to be bored again.

5. If you have a chance to pack for the journey (which I did not) include warm clothing. Also a supply of lemon juice is useful to bathe freckles, which multiply like a plague of insects across your skin once exposed to the sea air.

6. Prepare to be stoic. You will witness the misery and sacrifice of war. Even If you are lucky enough to avoid battle, deaths on board from injury and disease occur frequently.

7. Do remember to knock the weevils from the ships biscuits, and do not try to cut biscuits into delicate pieces; they resist all attempts.

8. If there is a tall, sombre physician around, whose job it is to keep you out of trouble, and looks at you with eyes … Oh, no – she is coming back with the tea - but alas no scones.

There is much more to tell, and if you feel like indulging in a romantic adventure and discovering what happened during and after my unscheduled voyage, please take a look at Only a Hero Will Do. (I haven’t even begun to tell you about Doctor Withington and you need to know about him.)

Marriage to a cruel dandy is not how Hetty Avebury envisions spending the rest of her life. Determined to avoid the match, she raises funds the only way she knows how – gambling. Her plans go astray and she finds herself on board a man-of-war under the care of its high handed physician. But Hetty soon realizes that Doctor Withington is not quite the stuffed shirt she had first imagined.

Easy Comfort Food

My British friend, author Susan Lodge, is here with a delicious recipe that I make even when I have time to cook. The kitchen is all yours, Suze.

The world moves faster now and we all have time crunches that take away from home cooking. But here is the perfect meal for when you are really pressed to feed the family.

Quick Pasta Bake
300gm (10oz) dried pasta Penne works well
1 large onion chopped
3 garlic cloves peeled and crushed
4 rashers of thick bacon cooked and chopped into bite size pieces
1-2 tbsp. of olive oil
125 ml (4 oz) water or wine
400gm (14 oz) tin of plum tomatoes.
1 tsp. dried mixed herbs
110 gm (4oz) of hard cheese grated or mozzarella sliced.
Salt to taste
Pepper to taste

Preheat oven to 180°C or 350°F.

Cook the pasta for the prescribed time on the packet.

In a large pan gently fry the onions and garlic in the olive oil for a few minutes until soft and transparent.

Add tomatoes, water/wine, bacon, and mixed herbs. Season with salt and pepper.

Simmer gently for five to ten minutes until the sauce has thickened slightly.

Combine the drained pasta and tomato mixture and turn in to an oven proof dish.
Sprinkle with cheese and bake ten minutes, or until the cheese is melted and bubbling.

Nice served with a green salad and some crusty bread.

Here is a peek at my Historical Romance releasing October 6, 2015 through Crooked Cat Publishing. This is a tale of treachery and passion set against the backdrop of Nelson's Navy. I hope you enjoy it.

The naval frigate was his life. It was her nightmare.

Spring 1803

Daughter of England’s foremost code breaker, Jane Charlesworth is the only person thought capable of deciphering a vital Government document. But when a naval frigate is sent to enlist her services and transport her to Malta Jane is filled with horror. Haunted with terrible memories of an earlier voyage, she has no intention of putting herself under the protection of the Admiralty ever again.

Anxious to be at the forefront of the action, as the Peace with France crumbles, Adam Marston is livid when his ship is diverted to collect a reluctant blue stocking whose accusing eyes and insolent manner hold nothing but contempt for him and his orders. Sparks fly when Captain and code breaker find they have different ideas on how to handle a French attack, a malicious Chaplain, and boisterous midshipmen.

Duty and desire collide as Malta approaches but Jane is determined that her judgment will not be clouded by the Captain who, once he has dispatched his Rebellious Cargo , will sail out of her life and back to his convoy. But as the ship docks Jane’s life becomes a nightmare and she is forced to gamble that Adam is the one person she can trust.

As passion battles with duty will future orders throw them together or tear them apart?

A Delicious New Taste

That's tangy curry! Now don't wrinkle your nose if you've never tried curry and have convinced yourself it's too spicy. My friend, multi-published author, Vonnie Hughes is here to change your mind. The kitchen is all yours, Vonnie!

TANGY CURRY
2½ lbs of cubed cheap steak (it will be simmered for ages so cheap steak is fine)
2 finely chopped onions
1 chopped apple
2 chopped carrots
2 tablespoons of ordinary flour
Juice of half a lemon
2 tablespoons of golden syrup (light treacle)(corn syrup)
1 dessertspoon of mild curry powder
1 medium tin of tomato soup
1 small tin of pineapple pieces

Place the steak in a large pot. Add the onions, apple and carrots.

In a bowl mix the flour, lemon juice, golden syrup, curry powder and a little of the pineapple juice. Stir this flavored thickening and add to the meat in the pot.

Add the tomato soup and pineapple pieces.

Cook on a very low heat for two hours, stirring occasionally to prevent sticking. (A little extra liquid may be needed. Water is fine).

Best served with rice and a tossed green salad.

Now while you have that 2 hour wait, how about a peek into my historical romance?

War brings together two injured people who are desperate to return home - at any cost.

Both of them are scarred by war; she because of the shattered men she nurses; he because of the loss of friends and the horrors he must endure daily.

Colwyn Hetherington has a chance to put it all behind him and return to England. Juliana Colebrook desperately wants to go to England to seek out her relatives. They take an almighty chance and travel together, setting in train a series of events that neither could have anticipated.
