Bite into Something Delicious

Cookies are high up on my family’s snack list. Heck, some would consider them a breakfast. These oatmeal cookies can be served as both. They are so easy to make, and you can use only chocolate chips, raisins, or leave out both if you prefer. Make the combo your own.

Did I mention these tasty morsels possess soft centers, crispy edges, and a mind-boggling chewy texture? Well, I just did. Wink. Face it. These cookies are a family favorite for a reason, and now they can be your family’s favorite, if you dare to wander into the uncharted territory of baking from scratch. 

With a prep time of 15 minutes, chill time of 1 hour, and cook time of 10 minutes, they’re the perfect cookies for impromptu bake sales for your kids. Eat them either warm and fresh or prepare these treats in advance for family gatherings or a much-needed dessert when someone pops by unexpectedly. You’ll be glad you did.

Thumbs up Oatmeal Raisin Chocolate Chip Cookies


1 cup all-purpose flour, leveled
½ tsp baking soda
½ cup unsalted butter, at room temperature
¼ cup granulated sugar
½ cup packed light or dark brown sugar
1 large egg
1½ tsp vanilla extract
1¼ cups old-fashioned rolled oats
½ cup semi-sweet chocolate chips
½ cup raisins

Combine the flour, baking soda, and salt in a medium size bowl. Set aside.

Cream butter, sugar, and brown sugar in a large bowl, using an electric mixer fitted with a paddle or whisk attachment on medium-high speed for 2-3 minutes.

Add egg and vanilla. Mix until creamy and well combined, about 1 minute.

Blend in flour mixture and mix on low speed just until incorporated, about 30-60 seconds. Stir in the oats until combined.

Then add the chocolate chips and raisins and mix until well distributed. Cover and chill for 1 hour.

Preheat oven to 350°F (175°C).

Line two baking sheets with parchment paper and set aside.

Scoop 16 equal-sized balls (about 2 tablespoons/45g) of cookie dough, roll into even balls, and place 6-8 cookies, about 3 inches (7.5 cm) apart, on each prepared baking sheet. Flatten slightly with your fingers. Bake one sheet at a time for 10-12 minutes or until edges of the cookies are set and lightly browned, and the centers look under-baked, pale, puffy, and dry.

Remove baking sheet from the oven and let cookies cool on the sheet for about 5 minutes, or until firm enough to move. Transfer them to a wire rack and let cool completely. The cookies will stay fresh in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.

While you’re waiting for the cookie dough to chill, pop on the kettle or turn on the coffee pot and settle into your favorite chair with one of my books. FRESH FROM THE OVEN

Sally Baker, the lovely wife of Action-Adventure author Elliott Baker, is here with her latest cookie creation. These cookie bars include the Baker's Unsweetened Chocolate Brownie recipe found on the inside of the packaging and are absolutely delicious.

Sally Baker's Muddy Boots
1 family sized tube of Pillsbury Chocolate Chip Cookie Dough
½ family sized tube of Pillsbury Peanut Butter Cookie Dough
Bag of M&M caramels
Baker's Brownie Mix prepared with the following ingredients:
4 oz. Baker's Unsweetened Chocolate
¾ cup butter or margarine
2 cups sugar
3 eggs
1 tsp. vanilla
1 cup flour

Preheat oven 350° F.

Cut parchment paper to fit a 9 x 13-inch pan. Insert the paper and then grease it.

Break up the chocolate chip dough into chunks and fill the pan.

Break up the peanut butter dough and scatter across the chocolate chip dough.

Make the brownie mix. Stir in half of the M&M caramels.

Pour the brownie mix over the cookie dough.

Sprinkle remaining M&M caramels over the top.

Bake at least 35 minutes or until a sharp knife inserted in the center comes out clean.

Let cool and then cut into squares.

Chocolate - the Elixir of Life

This is a favorite holiday cookie for my family. Mom whipped them up and us kids fought to lick the spoons. Now as adults, we try to have a little more decorum as we wait for these delicious chocolate balls to come out of the oven. Although I must admit, I do swipe my index finger in the bowl when no one is looking.

CHOCOLATE BALLS
1 stick butter
1 ½ cup sugar
½ cup cocoa
4 cups flour
1 tsp. cinnamon
½ tsp. cloves
½ tsp. baking powder
½ tsp. vanilla
1 cup coffee at room temperature

Preheat oven to 350° F.

COOKIE DOUGH
Mix butter, sugar, and cocoa together in a medium-sized bowl. Add the other ingredients in a large bowl. Stir well. Blend in the butter mixture.

Form the dough into little balls.

Bake 10 minutes. DO NOT OVERBAKE. The balls will get hard.

FROSTING
1 cup powdered sugar
2 tbsp. milk
½ tsp. vanilla

Add milk slowly to the sugar to make right consistency. Stir in vanilla. Mix well. If too thin, add more sugar. If too thick, add a few more drops of milk until you get a spreadable consistency.

Grab a few chocolate balls and then pour yourself a glass of milk. Get comfy and enjoy a little from my latest release.

Prologue
1993

I was jerked from my sleep while the phone was still buzzing its first high-piercing ring. I glanced at the clock on the nightstand beside my bed. It read 4:17 a.m. I knew something was wrong.

The second ring was abruptly broken up and my mother’s muffled voice carried into my room. I was already sitting upright in my bed when my bedroom door squeaked open. My mother’s slight figure appeared as a shadow near my door.

“Lyssa? You up?” she asked.

“What’s wrong?” My voice was no louder than a whisper.

I watched my mother slowly make her way into the dark room. I couldn’t make out the expression on her face, but the stiff movement of the outline of her body was hesitant.

She turned on the lamp and sat down beside me. Her face was pale. She let out short, shallow breaths. It seemed difficult for her to look me in the eyes.

“What is it?” I asked. “What’s happened?”

Finally, my mother looked at me with pain in her eyes. “Lyssa . . .” She smoothed her hand gently across my arm. “Abbey’s dead.”

I took in her words without an ounce of denial. The reality of what my mother had told me was instant.

My best friend was dead.

Savor the Good Taste of Life

This family favorite dessert is a little bit like a cookie, a little bit like a candy bar, and 100% delicious.

COOKIE BARS
¾ cup granulated sugar
¾ cup packed brown sugar
1 cup butter or margarine, softened
1 tbsp. vanilla
1 egg
2¼ cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
1 package (12 ozs.) semisweet chocolate chips
1 package (12 ozs.) butterscotch chips

Preheat oven to 350ºF.

Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Divide dough. Set half of the dough aside for later.

Stir in chocolate chips. Press the chocolate chip dough into one 9 x 13-inch pan.

Stir butterscotch chips into the second half of the dough. Press this dough into the second 9 x 13-inch pan.

Bake both pans for 25-30 minutes or until light brown (centers will be soft). The chocolate chip dough will cook faster than the butterscotch dough. Cool and then slice into bars.

Above the tree line floats an airship close to three hundred feet long with a slightly rounded wooden hull. Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

More Crunch in Every Munch

The measurements for this recipe are not based on imperial or metric. All you need is a tea cup and a teaspoon!

Crunchy Cinnamon Cookies
2 cups plain flour
2 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
1 cup sugar
½ cup vegetable oil
1 tsp. vanilla essence (vanilla extract)
¼ cup water

Preheat oven to gas mark 4/ 350°F/180C

Pour oil in a bowl and stir in sugar. Add water and vanilla. Mix well. Add this to the dry ingredients. Mix thoroughly and divide the mixture into cookie sheets or the individual sections of a bun tray or muffin pan. The mixture will be runny and will spread to accommodate whatever vehicle you use. The resulting cookies have a very homemade appearance that is quite satisfying!

Bake about five minutes. Rotate the tin and bake for another five minutes. Ovens vary and I found I needed to leave them in longer. What you are aiming for is to take the cookies out when they are still a little soft. They will harden as they cool.

This is a recipe you get better at the more you make it. The number of cookies per batch will also depend on what you cook the mixture in. I usually get about a dozen but I gave the recipe to a friend and she only got nine. I didn’t see what they looked like, however, as she ate the whole lot as soon as they came out of the oven!

You can alter the recipe to suit yourself; perhaps adding chocolate chips. My personal favourite is to use almond essence instead of cinnamon or vanilla.

Elgiva, a young elf banished from Elvendom, must seek shelter among the Saxons as her only hope of surviving the coming winter.

There is help to be found along the way from a petulant pony and a timid elf boy but, as the strength of their adversary grows, can Elgiva’s friends help her to find the Lorestone before it falls into the wrong hands?

EXCERPT
The night was waning when Elgiva woke, wondering where she was. The dark ceiling of Joskin’s cave hung above her, and everything had a reddish glow, cast by the embers of the fire. She slid from under the fur coverlet, her skin tightening at the loss of its warmth, and searched for her leather sandals.

Something had woken her, something that waited outside the cave. A runnel of dread ran down her spine.

She had an inexplicable sense of impending danger, but it was too insistent to ignore. An unnamed instinct stopped her from alerting her companions. She must face this menace alone.

She left the cave as quietly as she could. Her heart pounded in her throat as she peered between the rowan trees and searched the night. Whatever had awakened her, it beckoned. She held her breath and listened, but her ears detected nothing, save for a silence as dark and empty as an abandoned crypt.

It would soon be daybreak, but the sun had yet to rise, and the dark beyond the cave swarmed with potential horrors. She stepped out from among the rowans, relying on her acute senses to make out her surroundings. An unnatural calm gripped the night and as her sandals whispered against the cold grass, they sounded abnormally loud. She feared they would betray her presence.

After a while, she came to a stop and searched the trees. Thin strands of mist curled along the ground, cold and clammy, like an exhalation of sickness.

She hugged her shoulders, knotted her fingers in the cascade of her hair, and shivered in her ragged robe. All around her, the silence seemed to be drawing into focus.

“Who is it?” Her throat was too dry for her purpose. She swallowed and licked her lips. “Who’s there? I know you’re there. I can . . . I can feel you!”

Feel you.

A flash of silver sliced through the dark, and Elgiva gasped in fear. Her arms came up to shield her face as the beam struck a rock several yards ahead. It exploded with a whoosh and sent up thousands of splinters of light, which fell to the ground and sizzled in the mist.

A shape now stood upon the rock, its form concealed in a black, hooded cloak.

Elgiva clutched the amulet to her breast. Her hands were white with terror. “In the name of Faine, who are you? What sort of trick is this?”

A soft, sly voice spoke back to her. “Why should you fear magic?”

“What do you want?” she pleaded, her voice a croak of fear.

“To see for myself.”

“To see what?”

The dark shape sniggered, but made no answer. Instead, it swept its cloak aside, and a cloud of sparks flew out and covered the ground with beads of light.

Elgiva stepped back unsteadily, resolved to flee.

“Stay!” commanded the creature.

It raised a skeletal hand, and the forefinger swung towards Elgiva and pinned her against the darkness, holding her like a rivet of bone. No elf, no wilthkin, ever owned such a hand. Her legs threatened to buckle beneath her. This had to be a nightmare; she was still asleep in the cave. But no, it was all too real.

“Who are you? What do you want?” she cried. “I have . . . I have an amulet!”

The creature laughed derisively. “I am Death, and I have come for you.”

It began to radiate a sickly green light, enveloping itself in a caul of brilliance that pulsated with force. The light grew in size until the trees behind it were bathed in its angry glare. It reached for Elgiva, like a foul stench creeping along a breeze, and she was helpless. The creature’s power throbbed in the darkness.

Within the taut coils of her fear, her instincts screamed at her to run, but her limbs had turned to stone.

Siriol, Siriol, help me . . . help . . .

With a shriek of glee, the creature increased the throb of its power. Elgiva’s mind was suddenly invaded by an inexplicable force. She became divorced from herself and watched from a great distance, waiting for the horror to unfold.

Sweet with Just a Little Spice

These cookies are delicious and easy to whip up for that someone special in your life.

Ginger and Coconut Cookies

200 g (8oz.) plain flour
1 tsp. bicarbonate of soda, baking soda
1-2 tsp. ground ginger
100 g (4oz.) desiccated coconut
100 g (4 oz.) butter, softened
100 g (4oz.) castor sugar (fine sugar)
1 egg
4 pieces (3-4oz.) preserved stem ginger, chopped
1 tbsp. icing (confectioners) sugar
Food colouring to tint icing
100g (4oz) of good quality chocolate. (optional)

Preheat oven to 180° C / 350°F.

Sift flour, bicarbonate of soda, and ground ginger together. Stir in coconut.

In another bowl combine butter and sugar. Gradually add egg until all combined to form a soft creamy mixture. (Takes only a couple of minutes with an electric mixer.)

Stir in the chopped ginger.

Fold in half the flour/coconut mix with a tablespoon. Add the rest, and using your hands form the mixture into a soft ball of dough. If the mixture is too sticky, then add a little more flour. If too firm add a little liquid from the preserved ginger jar.

Wrap the dough in cling film and let it rest for a few minutes in the fridge.

Remove cling film and lightly roll out the dough on a floured surface until ¼ inch thick. Use a biscuit cutter to make your cookie shapes. I use a heart shaped cutter for Valentine’s day. Keep the rolling pin and cutter well-floured to prevent sticking.

Lightly grease 2 baking trays with a little butter. Arrange cookies on trays leaving a couple of inches between each one, as they may spread a little. Cook for about 10 – 14 minutes. The cookies should be a light golden colour and the base firm.

When the cookies have cooled dredge with the sifted, icing (confectioner’s) sugar.

Enjoy the cookies as they are, or decorate them further with chocolate.

Break chocolate into a small bowl and melt in the microwave. Use a teaspoon to drizzle over the cookies.

SWEETEN YOUR HOLIDAYS

Dominique Eastwick is in the kitchen whipping up a batch of mouthwatering cookies just in time for the holidays. Take it away, Dom!

ITALIAN ANISETTE COOKIES
COOKIE DOUGH
4 cups all-purpose flour
1 tbsp. baking powder
1 cup granulated white sugar
¾ cup vegetable oil
½ cup milk
1 tbsp. anise extract
2 eggs

ICING
1 cup confectioner's sugar
2 tbsp. hot water
1 tsp. anise extract
sprinkles, optional

Preheat oven to 375°F.

Combine flour, baking powder, and sugar in a large bowl. Make a well in the center and add oil, milk, extract, and eggs. Mix together until dough is sticky.

Oil fingers and pinch off dough in 1-inch pieces. Roll into a ball and place on a lightly greased cookie sheet, 1 inch apart, flatten top slightly.

Bake 8 minutes.

Blend anise extract and enough hot water to confectioner's sugar to form a smooth icing. Drizzle or spread across the cooled cookie tops. Add sprinkles for a festive touch.

Brew yourself a nice cup of tea to go with your delicious fresh cookies and then snuggle up with a good book.

Finally, he lifted his head. “I understand. Your needs are mine. But you can’t go into this relationship without knowing everything about me.”

Her thigh muscles started to shake. She fought to keep her legs together while desperate to rip the silk from her body so she could wrap herself around him. “I promise nothing you say will change my desire for you.”
“You’re in the midst of the mating fever. It came on far quicker than I expected.”

“Then, help me,” she begged. Her hands the only tool she had to work with. She worked the buttons of his tuxedo shirt, inflamed to find a T-shirt blocking her ability to touch him. Frantic she worked the shirts from his waistband and replaced them with her touch. He hissed as she gripped his ass, pushing his erection into closer contact with her. With one knee in the sofa and a foot on the floor, he made a move to sit up. She took the opening to grip his long, hard cock. He flexed his hips so she could touch him more.
He threw his head back with a moan. She worked the length of him from base to tip. With every move, she adjusted him the way she wanted. He would be putty in her hands. With her free hand, she worked the button and zipper until his pants released and his cock sprang free.

Desire to taste him, to show him she could hunt and make him her prey infused her. She brought her lips down to the red angry tip, glistening with precum, and sucked. She savored the salty flavor, taking as much of him as she could into her mouth. She didn’t have to be an expert to know it wasn’t much. His hands, which had been fisted at his sides, shot up and tangled into her golden locks, urging her to take more and creating a rhythm to follow.

She might not have experience, but she had an inner sense of what he desired. With every flex of his hips, she took a little more of him into her mouth. When she cupped his balls, he growled and pulled out of her mouth. His lips came down on hers, bruising and demanding.

“Please help me,” she whispered against his lips. She needed release only he could give.

“Boss, sorry to interrupt. You have a challenge,” a gruff voice interrupted through the double glass doors leading outside.

“Ten minutes. Give me ten fucking minutes,” he growled never taking his eyes off her. When the sound of footsteps retreated, he lifted the hem of her dress. “I would give anything to taste you right now. But, if I did, we would never get out of here.”

“Please,” she begged again. If he left her like this she would never forgive him.

Gingerbread? In Summer? YOU BET!

Many people tend to think about gingerbread around the winter holidays with good reason. The tradition of decorating a gingerbread house began in Germany during the 16th century and was associated with Christmas. Queen Elizabeth I is credited for the idea of making ornaments out of gingerbread men, gilding the dough with gold leaf and decorating them to resemble the dignitaries visiting her court. Yet during this era gingerbread was also served in the spring and summer with shapes that changed with the seasons. Spring cookies were shaped into flowers while summer cookies featured birds.

Why is this type of dessert so popular? The fact that ginger has a history of relieving digestive problems, such as nausea and indigestion, may be a factor, especially since it’s served on traditional “feast days” after a large meal. So these cookies could be a nice addition to your next backyard barbeque or picnic when your guests have overindulged.

These cookies go great with coffee or French vanilla ice cream!

Spring Fling Gingerbread Cookies
2 cups all-purpose flour, plus more for rolling
2 tsp. ground ginger
1 tsp. ground cinnamon
¼ tsp. ground cloves
¼ tsp. baking soda
¼ tsp. salt
½ cup (1 Stick) unsalted butter, softened to room temperature
⅓ cup brown sugar, packed
⅓ cup unsulfured molasses
1 large egg
decorating sugar or sprinkles

In a medium-sized bowl, sift the dry ingredients together into a medium-sized bowl.

Use an electric mixer to beat butter and brown sugar in a large bowl until smooth. Beat in molasses and egg. Set the mixer on low, and then add dry ingredients slowly. Mix until dough is formed.

Place dough on floured plastic wrap. Wrap well and chill in the refrigerator until firm. (Between 1-2 hours)

Preheat oven to 350° F.

Divide dough in half. Working with one half at a time (rewrap and refrigerate other half), place dough on floured parchment or waxed paper. Roll it out to ⅛ inch thick, turning, lifting, and flouring dough (and rolling pin) as needed. Freeze dough (on paper) until firm, about 20 minutes.

Repeat this process with the second half of the dough.

Loosen dough from paper. Cut out shapes and transfer to baking sheets. Decorate as desired.

Bake until firm and edges just begin to darken, 10 to 18 minutes, depending on the size of the cookie. Cool completely on baking sheets.

For those who might not be familiar with the genre, LitRPG is a subgenre of science fiction and fantasy which describes the hero's adventures within an online computer game. Finally my love of gaming and writing are coming together! I knew all of those nights I stayed up playing MMORPGs would pay off someday. Right now my LitRPG is in the hands of my editor.

COOKIES WITH A TWIST

and we're not talking Oreos.

When Ruth Graves Wakefield invented chocolate chip cookies in 1938 – hence forth named Toll House Cookies for the inn she owned in Whitman, Massachusetts – the confection became an instant American classic. So, perhaps, no one should be messing with these gooey, nutty hunks of near perfection. Ah, but I couldn’t help myself. As I’ve gotten older my taste buds seem to dance less at the prospect of excessive sweetness and more for. . . something else. I began tinkering with Ruth’s invention – I hope she doesn’t mind – and came up with these jam-packed babies that I call. . .

Twisted Chocolate Chip Cookies
2¼ cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
¾ cup granulated sugar
¾ cup packed brown sugar
1 tsp. vanilla extract
2 cups dark chocolate chips*
1 cup nuts



Frequent chocolate chip cookie bakers will note that here is where the recipe goes off the rails.

1 cup dried cranberries
1 cup dried blueberries
1 cup coconut, I prefer the type without added sugar, but either variety works.

Preheat oven to 375ºF

Mix sugars, butter, vanilla, and egg in large bowl. Stir in flour, baking soda, and salt (dough will be stiff).

Stir in chocolate, dried fruit, coconut, and nuts.

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

Bake 8 to 10 minutes or until light brown round the edges (centers will be soft).

*Note: Chocolate chips retain their shape because they contain less cocoa butter than high-end chocolate, so purists may want to chop their own chocolate to get more of the good stuff.

ALL THAT'S GOOD FROM THE KITCHEN

Admittedly, these can take a bit of work, but the outcome is worth it. Don’t believe me? There were enough cookies to fill a dinner plate when this batch was finished, but when it came time to take the picture, only three cookies remained.

Brown Butter Cookies
2 cups butter (No substitutes)
2 cups brown sugar
2 eggs
2 tsp. vanilla extract
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
3 cups all-purpose flour
⅔ cup chopped pecans

Icing (Optional)
½ cup reserved brown butter
2 tsp. vanilla extract
3 ½ cups confectioners sugar
½ cup hot water

Preheat oven to 350 degrees F (175 degrees C)

Heat butter over medium heat in a saucepan for 5 minutes or so, until it turns nut brown in color. The foaming and bubbling is part of the process, but make sure not to burn it. Remove from heat and cool slightly. Reserve ½ cup butter for frosting.

Pour remaining brown butter into a large mixing bowl. Beat browned butter with brown sugar until the butter is no longer hot. Mix in eggs, 2 teaspoons vanilla, baking soda, baking powder, and salt. Beat thoroughly. Mix in flour and chopped pecans. Drop tablespoons of dough onto ungreased baking sheets. If you don’t want to ice the cookies, gently push a half-pecan into the center of each dough ball.

Bake for 10 minutes or until light brown around the edges. Cool.

If you choose to ice the cookies, in a medium bowl, mix the reserved ½ brown butter with vanilla, confectioners’ sugar, and hot water. Beat until smooth. Frost cooled cookies and place a half-pecan in the middle of each cookie.

A WORLD OF YUM

This is a new family favorite. I made these in place of my traditional Christmas Cookies last year, and have requests to make them for all upcoming holidays. For New Years I made an extra batch to store in the freezer for any time an unexpected guest visits, and they lasted about a day.

Chocolate Chip Chocolate Cookies
½ cup unsweetened baker’s chocolate powder
¾ cup granulated sugar
¾ cup packed brown sugar
1 cup butter (plus an additional amount for coating the baking tray)
1 tbsp. vanilla
1 egg
2 ¼ cup all purpose flour (plus an additional amount for coating the baking tray)
1 tsp. baking soda
½ tsp. sea salt
1 package (12 ounces) semi-sweet chocolate chips
¼ package raw pecan halves
½ cup (approximate) coarse sugar or sanding sugar

Preheat oven to 375° F.

Prepare the baking sheet by coating the surface with butter and then dusting with flour. This will help ensure the cookies do not stick.

Prepare the plate. Sprinkle the coarse or sanding sugar on the surface for pressing the cookie dough.

Mix chocolate powder, granulated sugar, brown sugar, butter, vanilla, and egg in a large bowl until blended.

Stir in flour, baking soda, and salt until mixed. (The dough will be stiff.)

Stir in chocolate chips until evenly mixed.

Using the tablespoon-sized measuring spoon, scoop one cookie and drop it onto the plate.

Using your fingers or the back of the spoon, press and mold the dough until it is shaped the way you desire. (My family likes the traditional rounded cookie shape—but you do you!)

Lift the cookie and place it sugar-side up on the baking sheet. Press one of the pecan halves into the center. Repeat for the remaining cookies.

Space the cookies about 2 inches apart on the baking sheet. Bake for 8 to 10 minutes. Cool slightly. Remove from the cookie sheet. Finish cooling on a wire rack.

This recipe makes about 36 cookies.

DOLCE - Italian for Sweet

And that's just what this dessert recipe for one of my favorite cookies is, sweet and so good. I know you all will love them. Not only are they tasty, but they are easy to whip up. Make a double batch because they won't last long when your family gets a taste.

Ricotta Cookies
2 sticks margarine
1 lb Ricotta
3 eggs
2 tsp. Vanilla
4 cups flour
1 tsp. baking soda
1 tsp. salt
2 cups sugar

Preheat 350 degrees° F.

Mix all ingredients together. Drop onto lightly greased pan by tablespoonful.

Bake 12-15 minutes.

Frosting
Powder sugar
Vanilla extract
Milk
Sprinkles, optional

Mix the three ingredients to your desired consistency. Spread on cooled cookies.

EXCERPT
Now, I laid down my fork and leaned into my seat. I knew she didn’t want to talk about this anymore, but I did. “This all sounds crazy to you, and maybe in the beginning, it was something to joke about, but now, I’m not sure. These pictures were taken directly out of my life, and this woman was in every one of them. You can’t tell me I just dreamed it from memory, because my memory isn’t that good! The photos were identical all the way from the clothes we wore, to the smile on our faces. Hell, even the background was the same! She was the only thing that was different. How could that be?”

I stared at her, waiting for a response as she took it all in.

“Like I said on the phone, I just don’t know what you want me to say. I’m not sure what you’re asking me. Is it weird? Yeah, totally, but I’m no dream expert, and neither are you. Like I said before, maybe it’s your subconscious taking over. I’m sure there’s a logical explanation, and it probably has some fancy scientific name.”

“She’s my wife,” I said flatly. “I saw a picture of us from our wedding, and we looked like we belonged together. We know each other. I mean, really know each other. I wish you could see us together, because you’ve never seen me this way with anyone before.”

“And what way is that?”

“In love,” I answered.

“In love,” Shelly repeated and then pushed herself away from the table.

“Well, Maddy, me seeing you with her is something that will never happen. Do you wanna know why that will never happen?”

“I know why you think that will never happen, but that’s where you’re
wrong.” I stared at her and said, “I’m just gonna come out and say it. I think she’s real.”

Shelly took a deep breath and pored over her food. “Maddy, Maddy, Maddy. What are you saying? This is crazy! I’m back to thinking these dreams are about your mom, because this is way beyond not getting laid. You lost a woman you loved, you miss her, and now you’re trying to replace all those things you miss about her with this other woman.”

Shaking my head, I said, “If this was just about me missing my mom,
then why wouldn’t I just dream of my mom? There’d be no reason for this
woman to be in my dreams if it were just about my mom.”

I watched a look of frustration cross Shelly’s face as she ran a hand
through her hair. “You said you were at your dad’s today. How’s he doing?”

“Wow, that was a very obvious subject change,” I pointed out.

“I’m sorry, Maddy, but I’m having a real hard time digesting this food and your dreams at the same time. I need a fucking break.”

“Fine, but don’t use my dad as an excuse to change the subject.”

She touched my arm. “I’m serious. How’s he doing?”

I looked at her. “He’s desperately lost without her, and I don’t know how to make him better. Of course, I knew it would be hard for him to move on, but I thought eventually he would.”

“Maddy, it’s only been eight months. Give the man some time.”

“But he’s only getting worse. She was the love of his life, and he can’t live without her. Until I started having these dreams, I’ve never experienced that kind of love before and what it felt like to have someone to come home to, or someone to comfort you while you cry in their arms and take care of you when you lose your mom to cancer. The love he misses is the love I have with this woman.”

Shelly kicked the chair out from underneath her and came toward me. “What are you saying?” she yelled. “That you love this woman the same way your father loved your mom? Madison, that is ridiculous. It is not the same!”

I shoved myself away from the table and stormed across the room. “Maybe not here, in real life, but in my dreams it is! We were married! I saw the picture of us. We had a life together. We’d known each other a long time. I can feel it. Hell, my brother graduated from the academy eleven years ago, and she was in the pictures! Eleven years ago!” I stopped and took a deep breath. “If you could see these pictures, you’d understand. It isn’t just about the mere fact that she was in them, but it’s about how close she looked with my family. She was a part of my life.”

Alicia Joseph grew up in Westchester, Illinois. Her first novella, Her Name, was published by Musa Publishing in 2014. Her Name is a sweet, romantic story about a woman who believes the beautiful woman she dreams about is the real love of her life.

Loving Again is her second published novella. Alicia is currently working on a new novel called A Penny on the Tracks, a coming of age story about love and friendship. Alicia has many works-in-progress that she hopes to finish soon.

When she is not writing, Alicia enjoys volunteering with animals, rooting for her favorite sports teams, and playing “awesome aunt” to her nine nieces and nephews.
