A WORLD OF YUM

by Chris Pavesic

This is a new family favorite. I made these in place of my traditional Christmas Cookies last year, and have requests to make them for all upcoming holidays. For New Years I made an extra batch to store in the freezer for any time an unexpected guest visits, and they lasted about a day.

Chocolate Chip Chocolate Cookies
½ cup unsweetened baker’s chocolate powder
¾ cup granulated sugar
¾ cup packed brown sugar
1 cup butter (plus an additional amount for coating the baking tray)
1 tbsp. vanilla
1 egg
2 ¼ cup all purpose flour (plus an additional amount for coating the baking tray)
1 tsp. baking soda
½ tsp. sea salt
1 package (12 ounces) semi-sweet chocolate chips
¼ package raw pecan halves
½ cup (approximate) coarse sugar or sanding sugar

Preheat oven to 375° F.

Prepare the baking sheet by coating the surface with butter and then dusting with flour. This will help ensure the cookies do not stick.

Prepare the plate. Sprinkle the coarse or sanding sugar on the surface for pressing the cookie dough.

Mix chocolate powder, granulated sugar, brown sugar, butter, vanilla, and egg in a large bowl until blended.

Stir in flour, baking soda, and salt until mixed. (The dough will be stiff.)

Stir in chocolate chips until evenly mixed.

Using the tablespoon-sized measuring spoon, scoop one cookie and drop it onto the plate.

Using your fingers or the back of the spoon, press and mold the dough until it is shaped the way you desire. (My family likes the traditional rounded cookie shape—but you do you!)

Lift the cookie and place it sugar-side up on the baking sheet. Press one of the pecan halves into the center. Repeat for the remaining cookies.

Space the cookies about 2 inches apart on the baking sheet. Bake for 8 to 10 minutes. Cool slightly. Remove from the cookie sheet. Finish cooling on a wire rack.

This recipe makes about 36 cookies.

I am currently working on two projects. I have a two book epic fantasy in the draft/beta reading stage and I am working on a LitRPG novel concept. For those who might not be familiar with the genre, LitRPG is a subgenre of science fiction and fantasy which describes the hero's adventures within an online computer game. Finally my love of gaming and writing are coming together! I knew all of those nights I stayed up playing MMORPGs would pay off someday. Right now I am in the world-building stage for my LitRPG.

It all boils down to more time in front of the computer and putting words on the screen. Over the next few months I will make more announcements as events warrant. Until then my short stories are available on Amazon.com and are free if you have Kindle Unlimited.

Praise for Heart & Mind
“The author has managed to weave an intricate web about being true to yourself. One shouldn't be guided or led by others. Above all, feel the magic in your own heart. As the fairy godmother believes sometimes it is best not to mess with destiny.” –Chief, USN Ret...VT Town—a Top 500 Reviewer on Amazon.com

Praise for The World In Front of Me
"Picked up this short story because I noted it was previously published in Penumbra, which was a pretty high quality publication. And this story lived up to my expectations for a professional quality piece.

The story's main idea reminded me a lot of the Lakeside community in Neil Gaimon's American Gods, but I won't say anymore about that for fear of giving away spoilers. But fans of Gaimon should really enjoy this story. Fans of strong women who make tough choices should enjoy this as well"—KSluss—Review on Amazon.com

Praise for Going Home
"This is an excellent short story that is full of surprises for the reader. Martial law is about to be imposed in the colony.

A secret room, trips on a train and a clandestine meeting are all part of this superb short story.

Most highly recommended"—Off Grid . . . And Loving It—a Top 500 Reviewer on Amazon.com

Praise for Wonderland
"The writing is beautiful, the characters are complex and thoroughly developed and the story is fascinating. All of it together creates a world you don't want to leave when the book ends. I am so glad I discovered this author and I cannot wait for her next book"—Mary—Review on Amazon.com

Slip Away with Chris Pavesic

I wanted to share just a few photos from my travels to Brodhead, Wisconsin. This is a wonderful town near where I live with a rich history and a very nice state trail and makes the perfect weekend getaway any time of the year. I think it is important to celebrate our own little corners of the world. There is beauty and history all around. We just have to look for it!

100_1122

The Sugar River State Trail follows an abandoned railroad line in south central Wisconsin for 24 miles from New Glarus to Brodhead. The Sugar River Trail headquarters is in the restored 1887 railroad depot in New Glarus. The building is on the National Registry of Historic Places and houses displays of local culture and railroad history.

When the town was originally settled, a nearby branch of the Sugar River was diverted along a canal to a small hydroelectric generator supplied by a small holding pond. This gave Brodhead the distinction of having electrical service before any other town in Wisconsin.

The area is known for its lovely gardens. This proper Victorian lady looks over a fall-themed flower garden.

Victorian-style homes abound in the town, complete with traditional widow's walks.

The railroad track that runs through the town features a small museum with a train and army tank on display.

A mural painted in the town celebrates the train's importance to the early development of the area.

I hope that you all are able to get out and enjoy whatever your own areas of the world have to offer.

Cheers!

SOMETHING SMELLS GOOD

This week we have the amazing fantasy author Chris Pavesic in the kitchen preparing a delicious and healthy addition to your dinner menu. The kitchen is all yours, Chris.

This recipe is one of the first I make during the fall season to go along with the bountiful harvest of apples available in my area of the Midwest.

TeaOrganic Ginger Candy

I use organic ingredients whenever I can. I find that it improves the flavor and I think it is healthier for me and my family. However, this chutney can easily be made with non-organic ingredients as well. It is all up to you—the cook.

Traditionally apple chutney is a savory sauce made from apples, brown sugar, vinegar, onions and various herbs and spices. It has a sweet and tart flavor that complements meat dishes such as roast chicken, beef, ham and pork chops.

In my family, certain people are allergic to onions (myself included). So I adapt recipes to take these allergies into consideration. I thought I would share my recipe with you.

Easy Apple Chutney
⅔ cup brewed tea, warm*
8 organic ginger candies
5 large apples, peeled, cored, and diced.
1 cup celery, diced very fine
⅓ cup Key Lime Juice
¾ cup light brown sugar, lightly packed
¾ cup cider vinegar
1 tsp. dried mustard powder or 2 tsp. yellow mustard
1½ tsp. sea salt
¾ cup dried cherries

Partially dissolve the ginger candies in the tea. Do not be concerned if the ginger candies do not completely dissolve. They will continue to melt during the cooking. You can substitute 1 tbsp. powdered ginger or 2 tbsp. minced fresh ginger in place of the candies. If you do, increase the light brown sugar to 1 Cup, lightly packed.

Combine the tea mixture and all remaining ingredients into a Dutch Oven. Cover and simmer for 50 minutes on your stovetop, stirring occasionally. Remove the cover and cook for about another 20 minutes. You want the excess liquid to evaporate and the chutney to thicken.

Dutch OvenRemove from the Dutch Oven and set aside to cool. Store covered in the refrigerator.

I like recipes that can be made in Dutch Ovens and Crock Pots. They really save a lot of time/effort. This one is probably one of the more elaborate ones—and yet the prep time is only about 15 minutes.

Prep Time: 15 minutes
Cooking Time: 70 minutes

*I use Trader Joe’s Specialty Pomegranate White Tea made with Organic White Tea Leaves, Hibiscus Flowers, and Lemongrass.

A Perfect Way to Go

by Chris Pavesic

Death by Chocolate Ice-Cream Cake is a special cake that I make for friends/family who love chocolate. It is a perfect treat for a summer birthday. This is a big cake, so be sure to invite a lot of people to celebrate!

For this recipe you will need three 8-inch cake pans. I use the disposable aluminum ones (eco friendly brands of course) because I have yet to find 3 glass ones that are the right size.

Ice Cream Filling
Use any type of ice cream or frozen custard that you want. For the cake pictured here, I used cherry vanilla. A single half-gallon will fill the pan completely.

Take the ice cream out of the freezer and let it soften for a few minutes. Line the cake pan with Saran Wrap before adding the softened ice cream so it is easier to remove after it re-freezes.

Spoon ice cream into the cake pan and smooth until it is level.

Place another piece of Saran Wrap over the top before putting it back in the freezer. Refreeze for several hours. (You can do this step the night before to ensure that it is frozen completely.)

Chocolate Cake
2 cups organic cake flour
2 cups organic white sugar
1 tsp. baking soda
½ tsp. baking powder
1 tsp. salt
2 sticks butter
4 tbsp. cocoa
1 cup water
1 cup whole milk or 1 cup Silk (Almond Milk)
2 eggs
1 tbsp. vanilla
1 package semi-sweet chocolate chips

Preheat oven to 350°F.

Sift together the cake flour, sugar, soda, powder, and salt in a large mixing bowl and set aside.

In a saucepan set on medium heat, mix the butter, cocoa, and water until the butter is melted. Bring to a boil and then pour the mixture over the dry ingredients.

Blend the milk, eggs, and vanilla together and gradually add to the mixture, stirring constantly. (You can also use a hand mixer on low at this stage.) The batter should be fluffy and form stiff peaks.

Add in the package of semi-sweet chocolate chips. Stir with a spoon at this point until they are distributed evenly.

Divide the mixture between the two remaining baking pans. The pans should be lightly buttered and floured prior to pouring in the batter.

Bake 20 minutes or so.

Let the cake cool completely. Remove the two layers from the pans and place on plates.

About an hour before serving, place the two cakes in the freezer.

Whipped Cream and Chocolate Topping
1 can Redi-Whip Whipped Cream
1 bar dark chocolate 80% or higher cocoa

Using a knife or vegetable peeler, chop/shave the chocolate bar. It may tend to crumble a bit if you shave it—this is OK. (This step is a bit messy so you may want to do it in advance and just save the chocolate shavings/pieces in a plastic baggie until you add it to the top of the cake.

To Assemble
You have to work quickly. Remove the bottom cake from the freezer and place it on the platter/plate you intend to use for serving. Remove the ice cream from the freezer. Remove the Saran Wrap from the top and invert it onto the frozen cake. Remove the bottom of the Saran Wrap. Take the second cake from the freezer and place on top, pressing lightly to level. “Frost” the cake with the Redi-Whip, creating a border on the top. Inside of the border, sprinkle the chocolate pieces/shavings.

Serve immediately.

Cheers!

The Power of Being Alice

by Chris Pavesic

Liddell_&_Boyd_(Alice_in_the_looking_glass_works)_by_Karl_Beutel_2011
Liddell & Boyd (Alice in the looking glass works)_by Karl Beutel 2011

2015 marks the 150th Publication Anniversary of Alice’s Adventures in Wonderland. The story itself originates in 1862 when a girl named Alice Liddell and her two sisters rowed from Folly Bridge, Oxford, to Godstow with Lewis Carroll (Charles Dodgson) and his clerical friend, Robinson Duckworth. During this journey the girls were told the first version of the story to keep them entertained. Later the work was expanded and published in the version we now know and love.

For me, the character of Alice has always been a remarkable one in childhood literature. She displays an inner strength in every situation, no matter how bizarre it may be (and in Wonderland the situations are never normal!). In an interview for ScreenCrave, Tim Burton explains his attraction to the character of Alice:

It’s a story about somebody using this kind of imagery and this kind of world to figure out problems and things in their own life, and what’s fantasy and reality and dreams and reality — how they are not separate things, that they’re one thing. It’s how we use those things to deal with our issues in life.
For example, when she falls through the earth, Alice does not react with terror. She thinks, she talks to herself, and she analyzes what is actually happening and what may happen in the future. Even though it is a bizarre situation, Alice deals with it in a logical way:
'I wonder if I shall fall right through the earth! How funny it'll seem to come out among the people that walk with their heads downward! The Antipathies, I think--' (she was rather glad there WAS no one listening, this time, as it didn't sound at all the right word) '--but I shall have to ask them what the name of the country is, you know. Please, Ma'am, is this New Zealand or Australia?' (and she tried to curtsey as she spoke--fancy curtseying as you're falling through the air! Do you think you could manage it?) 'And what an ignorant little girl she'll think me for asking! No, it'll never do to ask: perhaps I shall see it written up somewhere.'
Alice retains this quality throughout the novel and its sequel. She is curious, logical, and prepared to give as good as she gets in arguments. It doesn’t matter if Alice speaks to a caterpillar, a rabbit, a footman, a grinning cat, or a queen; she works to make sense and to analyze the situation.

Warehouse 13 Character of Alice Lidell

It is this type of boldness that attracted me to the character and the tone I tried to emulate in my story, Wonderland, which is based on parts of both Alice’s Adventures in Wonderland and Through the Looking Glass. Wonderland is set in a version of modern-day America, but still maintains the fearlessness, strength, and curiosity of the original character. One reviewer on Amazon.com writes:

Chris Pavesic’s Wonderland is set in the U.S. and references modern events. You will see all of the characters that you know and love from Carroll’s work, but they are in relatable forms for those of us “across the pond.” For example, the Tea Party takes place at a sorority house during pledge week. The dormouse is a pledge from a near-by fraternity who has overindulged in alcohol. One of his “brothers” has used a Sharpie marker to draw a mouse nose and whiskers on his face.
There have been many versions of Alice’s story through the years, including (but not limited to) the Disney animated version, the Resident Evil franchise, and the most recent version by Tim Burton. The character of Alice has appeared in many different television programs, including Warehouse 13. The images of Alice and her Wonderland compatriots appear almost everywhere on household goods, clothing, and technology.

Salvador Dali Alice Adventures in Wonderland

Artists have taken inspiration from the works to produce vivid and beautiful interpretations of the characters and the world. For example, the “Alice in Wonderland” works are considered to be one of the rarest and most sought after Salvador Dali suites.

If you are interested in attending an event celebrating anniversary of this, please check out the following information at the Lewis Carroll website. The site lists 95 events in 11 countries.
