A COFFEE BREAK SPECIAL

I enjoy baking and creating new treats for my family. This is one we especially enjoy. I hope you do, too.
 
Fruit Gingerbread Cobbler
4 medium tart apples, peeled and sliced
1 cup water
½ cup packed brown sugar
1 tbsp. lemon juice
¼ tsp. ground cinnamon
1 egg
¼ cup sugar
½ cup 1% buttermilk
¼ cup molasses
 2 tbsp. olive oil
1 cup all-purpose flour
½ tsp. EACH baking powder, baking soda, and ground ginger
¼ tsp. EACH salt and ground nutmeg
2 tsp. cornstarch
1 tbsp. cold water
Nonstick cooking spray
1 tbsp. candied ginger, finely chopped (optional)
 
Preheat oven to 350° F. 
 
Spray square baking dish with nonstick cooking spray and set aside.  
 
In a saucepan, combine apples, water, brown sugar, lemon juice, and cinnamon.  Bring to a boil.  Reduce heat. Cover and simmer 8-10 minutes or until apples are tender.  Remove from heat and set aside.
 
In a large bowl, beat egg, sugar, buttermilk, molasses, and oil.  In medium bowl combine flour, baking powder, baking soda, ginger, salt, and nutmeg. Stir into buttermilk mixture just until combined.  
 
In small dish combine cornstarch and cold water until smooth; stir into apple mixture.  Pour apple mixture into square baking dish.  Spread gingerbread mixture over apples.   Top with candied ginger if desired. 
 
Bake 25-30 minutes or until a toothpick inserted into the topping comes out clean. 
 
Makes 8 servings.

Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

SOUP'S ON!

My sister-in-law Breen loves to cook and occasionally works her magic in my kitchen. Just the other day she prepared one of our family favorites. We thoroughly enjoy a bowl or two during winter as lunch or dinner. For me the pepitas make this dish a hit. I love scooping them out one at a time with a spoonful of soup!

Roasted Butternut Squash Soup
4 lbs. butternut squash, peeled, seeded, and cut into 1-in. cubes
2 tbsp. olive oil
Salt and pepper to taste
2 tbsp. unsalted butter
1 onion, roughly chopped
8 cups chicken broth
1 tsp. dried thyme
Pepitas (Shelled pumpkin seeds)

Preheat oven to 400° F.

Place squash on baking sheets; avoid overcrowding.  Toss with olive oil, salt, and pepper.  Roast for 30 minutes.

Meanwhile, in a large Dutch oven over medium-low heat, melt the butter.  Add the onion and sauté until translucent, about 5 minutes.  Pour in the chicken broth and add thyme.  Bring to a boil. 

Remove the squash from the oven and add to the broth.  Simmer for 10 minutes.  Remove from heat.  Using a regular or immersion blender, puree the soup until smooth.  Serve warm.  Top with pepitas if desired.

A Warm Welcome for Autumn

This recipe is hearty, delicious, and healthy. Hard to beat a trio like that. Add a crusty roll, salad, and your favorite beverage to create a superb lunch or dinner.

Kale and Butternut Squash Minestrone
1 tbsp. olive oil
¾ cup diced onion
½ cup thinly sliced celery
2 cups butternut squash, peeled (reserve rest of squash for another time) and cut into ½ inch cubes
1 can red kidney beans, rinsed and drained
1 can no-salt-added diced tomatoes
3 cups water
¾ tsp. dried rosemary
¼ tsp. salt or to taste
⅛ tsp. black pepper or to taste
2 cups coarsely chopped kale leaves (lightly packed) stems removed
4 tbsp. grated Parmesan cheese

Heat oil in soup pot/Dutch oven over medium-high heat. Add onion and celery; cook and stir 5 minutes or until onion is softened.

Stir in butternut squash, beans, tomatoes, water, rosemary, salt, and pepper in Dutch oven. Cover and bring to boil; reduce heat and simmer 30 minutes.

Add kale. Cover and cook 10 minutes or until tender.

Ladle soup into bowls and then sprinkle with cheese.

LUNCH or SIDE DISH? YOU DECIDE

I love to write fantasies, the stranger the better. Bring on the elves and never before seen or heard of creatures and I'm in fiction heaven. But my secret passion in life is cooking. Creating a new recipe invigorates me. And when my family asks for seconds I can't stop smiling. This is one of the recipes I use as a side dish or fast lunch. I think you and yours will like it, too.

Mushroom and Wild Rice Blend
1 can (3½ oz.) mushrooms, stems and pieces
1 can (10 oz.) beef broth
Water
1 onion, chopped
½ cup wild rice, rinsed
1 cup long grain rice
2 tbsp. butter

Drain mushrooms, retaining liquid, then set mushrooms aside.

Mix broth, water, and reserved mushroom liquid to make 2 cups.

In a medium saucepan over medium heat, pour in broth mixture then add onions and bring to a boil. Add wild rice, reduce heat, cover, and simmer for 20 minutes.

Add long grain rice. Boil again, reduce heat, cover, and simmer for 20 minutes. Add mushrooms and butter. Serve.

FRESH FROM THE OVEN

Fill your home with the beautiful aroma of fresh baked coffee cake. This recipe is easy and oh so tasty you'll want to make it often.

Cranberry Walnut Coffee Cake
2 cups all-purpose flour
3 tsp. baking powder
¼ tsp. salt
2 tbsp. sugar
2 tbsp. olive oil
⅔ cup milk
1 egg
⅔ cup canned whole berry cranberry sauce
olive or avocado oil to grease the baking dish

Topping
½ cup chopped walnuts
⅓ cup packed brown sugar
½ tsp. ground cinnamon

Glaze
1 cup confectioner sugar
2 tbsp. milk
¼ tsp. vanilla extract

Preheat oven 400° F.

In a large bowl, combine egg, milk, and oil. In medium bowl combine flour, baking powder, salt, and sugar. Stir contents of both bowls together.

Pour into a greased baking dish. Spread cranberry sauce over batter.

In small bowl combine topping ingredients. Sprinkle over cranberry sauce.

Bake for 18 – 23 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

In a small bowl, combine the glaze ingredients then drizzle it over coffee cake.

Poultry with a Twist

An easy and quick lunch or supper that is perfect for summer or anytime you’re in a hurry. This recipe calls for rotisserie chicken, which you can cook on your own but can also be purchased from most grocery stores.

Chicken Caesar Salad Sandwiches
3 cups shredded rotisserie chicken from 1 chicken
2 oil-packed anchovy fillets, finely chopped
1 garlic clove, minced
1 tbsp. fresh lemon juice
1 tbsp. red wine vinegar
1 tsp. Dijon mustard
½ tsp. Worcestershire sauce
¼ tsp kosher salt
⅛ tsp. black pepper
⅓ cup extra virgin olive oil
½ oz. (about ⅓ cup) Parmesan cheese, grated
3 tbsp. mayonnaise
¼ tsp. garlic powder
4 mini baguettes, split or 1 French bread baguette cut into 4 portions
4 romaine lettuce leaves

Place chicken in a medium bowl.

Process anchovy fillets, garlic, lemon juice, red wine vinegar, mustard, Worcestershire sauce, salt, and pepper in a blender until smooth. Gradually add olive oil, and process until smooth. Stir in Parmesan cheese. Pour dressing over chicken, and toss to coat.

Stir together mayonnaise and garlic powder in a small bowl. Brush cut sides of bread evenly with mayonnaise mixture. Heat a large skillet over medium-high. Cook bread, cut side down, in hot skillet, until toasted and golden brown, about 2 minutes.

Divide chicken mixture and lettuce leaves evenly among bottoms of toasted bread; cover with bread tops.

Summertime and the Cooking is Easy

This dish makes a quick and easy lunch for a hot summer day. No stove or oven required!

Tuna Hummus Pita Sandwich
1 5 oz. can tuna in water
1 tbsp. lemon juice
1 tbsp. red onion, chopped fine
⅓ cup cucumber, chopped
1 tbsp. chopped parsley
1 tbsp. golden raisins or dark raisins
3 tbsp. hummus, divided
1 mini whole-wheat pita
Parsley leaves, for garnish

Drain tuna then scoop into a bowl. Mix in lemon juice, onion, most of the cucumber, chopped parsley, and raisins.

Split pita in half horizontally so there is a top and bottom. Spread each half with hummus. Top with tuna salad. Garnish with remaining cucumber and parsley. Enjoy!

Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

EASY COOKING

This is a good “pantry” meal–which is a dinner where you use items from your refrigerator/pantry to create a healthy, tasty dish.

My recipe was created for substitutions. Any type of vegetables will do. You can even use canned vegetables if you drain them well. Also, any type of cream soup works. I am fond of cream of celery and mushroom for pot pies.

If you do not have fresh turkey/chicken, substitute chicken in a can or even tuna in a pouch.

Let your creativity be your guide.

Pantry Pie
2 cups frozen mixed vegetables, thawed
1 cup cooked turkey or chicken, cut up
1 can condensed cream of chicken soup
1 cup milk, divided
1 cup Bisquick Original Baking Mix
1 egg

Preheat oven to 400° F.

In large bowl mix vegetables, turkey, soup, and ½ cup milk. Pour into ungreased baking dish.

In medium bowl whisk together Bisquick, ½ cup milk, and egg until blended. Spread over vegetable mix completely.

Bake 30 minutes or until golden brown.

Bake Something Special this Weekend

Is there anything better than homemade sweet and salty caramel corn? Not only does it taste delicious, the aroma that fills the air when you are cooking it is heavenly.

Baked Caramel Corn
Nonstick cooking spray
24 cups air popped popcorn
1 cup (2 sticks) butter or margarine
2 cups firmly packed brown sugar
½ cup light or dark corn syrup
1 tsp. salt
½ tsp. baking soda
1 tsp. vanilla extract

Preheat oven to 250°F.

Coat bottom and sides of large roasting pan with nonstick spray. Place popped popcorn in roasting pan.

In saucepan, slowly melt butter. Stir in brown sugar, corn syrup, and salt. Heat to a boil, stirring constantly. Boil without stirring 5 minutes. Remove from heat. Stir in baking soda and vanilla.

Gradually pour over popped popcorn, mixing well. Bake for 1 hour, stirring every 15 minutes.

Remove from oven, and cool completely. Break apart and store in tightly covered container.

My Accidental Low-Buy Year

This is a difficult blog post to start writing. I’ve actually begun several times and scrapped the ideas because it didn’t seem right. I couldn’t get the correct words down on the screen. But here it goes. I hope it makes sense.

I'm a makeup and skin care enthusiast. I enjoy using products and comparing them. I enjoy researching ingredients and formulas. I enjoy reading about new products, watching YouTube videos about new releases, and talking about them with my friends. What I didn’t do last year was write about them very much.

It is true that I cut down the amount of posts I created in 2018. (I wrote a lot more in 2017). But that wasn’t the only reason. I didn’t write about makeup or skincare in 2018 because I simply didn’t buy much starting in March, 2018. (My birthday month.)

I was on a low-buy year without actually planning to be on one.

There were three reasons for this accidental low-buy year.

One: I purchased quite a few products in the previous year that I was excited to use. I had multiple products that filled the same purpose in my skincare and beauty regimen. So many that I started to feel uncomfortable with the number of items I owned.

It was a full year and, yeah, I still have items to get through. I had more than a year’s worth of “backups” for some products.

*Takes a deep breath.*

I had to let that sink in for a minute. A full year. I had too many.I’m not a minimalist, but I am striving to consume less. I did go through the KonMarie method for decluttering clothing, household items, and so forth. (If you followed her method: I still need to do sentimental items.) I even (gasp) got rid of some books. (Textbooks from my college days. They needed to go.) And I felt better having a more minimal wardrobe and less boxes of stuff stored in my spare bedroom and basement. I kept the items that “sparked joy” in those categories and haven’t looked back.

Two: Products don’t last forever. They expire. It’s a use-it-or-lose-it situation. I decided that I would use the products I had—ones that I was excited to use—before I purchased any more in that category. I did purchase a few items that I had panned (used up completely.) Lip balm made it into my cart because I have dry skin and live in the Midwest. (The struggle to have well-hydrated skin, especially on my lips, is real!) I also bought skin cleanser and shampoo because I developed an allergy to sodium lauryl sulfate and had switch to sulfate free versions.

Three: I didn’t purchase a lot of makeup products (eyeshadow, blush, highlighter) because I have ones that I enjoy. I have one face and can only use so many products in a day. If I bought something new in a category—an eyeshadow palette for instance—I would need to use it in place of something I already owned. And I enjoy the ones I own. The shadows are my favorite colors and formulas. Until I hit pan, or until the products go bad and I need to replace them, why buy something I might not like to replace an item that, in Marie Kondo’s terminology, “sparks joy” when I use it?

In case you are wondering: I currently have 8 eyeshadow palettes. I have tried more, but if something does not work well for me I pass it along to relatives. And in 2018 I didn't buy any for myself. (I bought gifts for people. I don't count those as purchases for me--although I keep the free samples that come with the orders.) Last year I completely panned one--the Too Faced Peppermint Mocha (pink) palette from the 2016 Christmas trio collection. It's the one I used the most and it took me more than 2 years to get through it. Companies give you a lot of product in those palettes!

What did I really over-buy on in 2017? Face and body moisturizing creams, face products, and lipsticks. And I am using them up along with any samples I still have.

For the new I will continue my “low buy” project. I thought I would write about products that I have panned. Provide thorough reviews about products that are not new but may be undiscovered gems for my readers. Go through the large number of samples I have on hand and try items that way. Discuss new purchases when I eventually do make them and the reason why I switched from a tried-and-true product to something new. And discuss what the low buy year taught me along the way--and what I am (hopefully) still discovering.

I want to complete another low buy year and write about products mindfully.

GOOD EATING

Recently The New York Times article, "Why Eating Processed Foods Might Make You Fat" by Anahad O'Connor, reported on a study that compared a "typical" American diet of processed food and a natural, plant-based diet. The study determined that eating processed food causes most consumers to overindulge, gain weight, and suffer health issues. As O'Connor states: "Observational studies of thousands of people have found that eating high amounts of these [processed] foods is associated with a greater likelihood of early death from heart disease and cancer." The study extolls the virtues of eating a natural, plant-based diet in order to achieve optimal health.

Why, then, do people "treat" themselves with processed foods like take-out pizza, potato chips, and mass-produced candy? It's simple. Big food companies spend a lot of money finding that sweet spot that combines the perfect ratio of fat, sugar, and salt that makes processed food addictive. There's a reason we "can't have" just one chip. Companies have worked over decades to "tweak" their recipes to make sure we keep eating and eating until the bag is empty! And then what happens? We buy more to satiate our cravings and the companies make more money.

So why not flip this narrative? Instead of craving take-out-pizza, why not make your own healthy version? Choose what you put into your body. Why not dream about a hearty meal with Vegan Pesto Parmesan Grilled Corn? If you retrain your brain, slowly, to crave these types of food, treating yourself will feel a lot better.

Vegan Pesto Parmesan Grilled Corn
2 - 4 ears of corn on the cob
1 tbsp. salt
Cold water

Set grill on medium.

Stir salt into water in a large bowl. Pull outer husks down the ear to the base. Strip away silk from each ear of corn by hand. Fold husks back into place, and place ears in water for 10 minutes.

Remove corn from water and shake off excess. Place corn on grill, close the cover, and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Carefully remove husks, open, and scrap off the kernels into a bowl.

Serve vegan pesto, get the easy recipe here, and freshly grated vegan parmesan on top of kernels.
