A Sweet Treat for Your Valentine

Donald's mother created this easy recipe and it soon became a family favorite.

CALICO FUDGE

⅔ cup milk
1½ cups granulated sugar
¾ cup brown sugar
Pinch of salt
2 tbsp. butter
4 tbsp. peanut butter
12 marshmallows, cut into pieces

Cook milk, sugars, and salt to soft ball stage. Remove from heat.

Add butter and peanut butter. Beat until creamy.

Lay marshmallows one inch apart in a greased pan. Pour fudge over the marshmallows.

Cut into squares when cold.

FATHER KNOWS BEST

Especially when it comes to candy. This wonderful peanut brittle has a WOW factor that adds to any celebration. Give as gifts or enjoy with family and friends. This recipe is a sure-fire crowd-pleaser! Make sure you have all the ingredients measured and ready to go, as it requires you to react quickly between steps.

FATHER KNOWS BEST PEANUT BRITTLE

1 cup white sugar
½ cup light corn syrup
¼ tsp. salt
¼ cup water
1 cup peanuts
2 tbsp butter, softened
1 tsp. baking soda
Candy thermometer

Grease a large cookie sheet. Set aside.

Bring sugar, corn syrup, salt, and water to a boil in a heavy 2 quart saucepan set over medium heat. Stir until sugar is dissolved.

Stir in peanuts.

Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300° F (150° C).

Remove heat. Immediately stir in butter and baking soda. Pour at once onto cookie sheet. With two forks, lift and pull peanut mixture into rectangle about 14x12 inches. Allow to cool.

SNAP candy into pieces and enjoy while you take a glimpse at my latest novel.

EASY SUMMER SWEET

These treats mirror the taste of a mass-produced candy bar while at the same time being made with simple ingredients. My family likes a bittersweet chocolate with a high amount of cacao, but you can use whatever type of chocolate you like the best. These pair exceptionally well with a dish of homemade vanilla ice cream.

Chocolate Coconut Squares

6 oz. sweetened condensed milk
1 tbsp. vanilla
1/8 tsp. salt
2 cups powdered sugar
14 oz. sweetened shredded coconut
16 oz. bittersweet chocolate (1 bag of chocolate chips can be substituted.)
2 tbsp. melted butter
Extra butter to coat aluminum foil

Line an 8x8 straight edged pan with aluminum foil, overlapping the edges, and lightly coat with butter.

Combine condensed milk, vanilla, and salt in a medium-sized bowl. Stir in powdered sugar (1 cup at a time) until you have a smooth mixture. Add coconut and mix until thoroughly coated and combined. Pour mixture into the prepared pan and press in to an even layer using your hands or rubber spatula lightly coated with butter.

Refrigerate for at least an hour, until firm enough to cut in to squares.
When the coconut mixture has set, lift out of the pan by the foil. Peel the foil off and place on a cutting board. Cut in to strips then cut in to squares.

Pop the squares back into the refrigerator. Keep refrigerated until ready to coat.

Heat a double boiler until the water simmers. Add chocolate to the top pan. Stir every so often until it has melted. Add butter, stir until chocolate and butter are completely blended and the chocolate is thinned and shiny.

Use a fork to dip each coconut square in to the chocolate. Allow any excess drip off. Place coated bars on a wax paper lined baking sheet. Continue to dip the bars and then let them sit until the chocolate is firm and set.

Store at room temperature or refrigerate.

Who Doesn’t Love Crunchie® Bars?

Those were my go-to chocolate bars when I was a kid, and I still love’em to this day. This angelic chocolate covered sponge toffee recipe will bring back memories of the good old days when a trip to the corner store armed only with a dollar bought more than just one candy bar. Create a batch for gifts or to add to the festivities, these melt-in-your-mouth treats will add life to any party.

CHOCOLATE COVERED SPONGE TOFFEE
1 cup white sugar
1 cup dark corn syrup
1 tbsp. vinegar
1 tbsp. baking soda
1 pound chocolate confectioner’s coating
Candy thermometer

Butter a 9x13 inch baking pan.

In a medium saucepan, over medium heat, combine sugar, corn syrup, and vinegar. Cook, stirring until sugar dissolves.

Set candy thermometer in place, and heat, without stirring until temperature reaches 300° F (150° C).

Remove from heat and stir in baking soda.

Pour into prepared pan. Do not spread. Allow to cool completely.

In the microwave (or over a double boiler) melt coating chocolate, stirring frequently until smooth.

Break cooled sponge toffee into bite sized pieces and dip into melted chocolate coating.

Place on waxed paper until the chocolate is set. Store in tightly covered container. Make sure to hide some pieces for yourself!

Every cook must taste test their finished product. Sit back, munch away, and take a glimpse at my latest novel.

ANY TIME TREATS

from C.D. Hersh

A family friend provided us with this candy recipe and we have taken great pleasure in making and sharing it ever since. If you're an Ohioan then this chocolate delight is called BUCKEYES. Otherwise it is

PEANUT BUTTER BALLS
2 cups peanut butter
1 lb. margarine at room temperature
2 tsp. vanilla
2½ to 3 lbs. powdered sugar
Popsicle sticks, optional

Mix peanut butter, margarine, and vanilla together.

Add powdered sugar. Mix well. Form into balls. Insert sticks if you chose to use them.

Chill in refrigerator for at least 1 hour.

COATING
6 oz. semi-sweet chocolate bits
3 tbsp. paraffin (grated)
Decorative candies/sprinkles, optional

Melt chocolate and paraffin in a double boiler. You may need more chocolate mixture to coat the balls than this recipe calls for.

Dip balls in chocolate and then candies/sprinkles. Place on waxed paper and allow to cool thoroughly.

Little Treats with BIG Flavor

This kid-friendly recipe is quick and easy to make. It’s a little bit like a s’more, a little bit like a bird’s nest, and 100% yummy. Get those marshmallows and chocolate chips ready!

Quick and Easy S'mores Treats

1 pkg. (12 oz.) semi-sweet chocolate chips
½ bag (5 oz.) mini marshmallows
2 cups pretzel sticks
2 cups vanilla wafers, broken into pieces

Preheat oven to 250° F.

Pour chocolate chips into an ungreased baking pan. Pop it into oven for about 5 minutes or until the chips get shiny. They should still retain their shape.

Take the pan out and immediately add the other ingredients. Stir as fast as possible because the chocolate will cool quickly.

This can be a bit messy when stirring—you will get chocolate on your hands—but that’s part of the fun.

When the other ingredients are coated, spoon the mixture onto parchment paper in serving-size portions. Allow to cool completely and serve.

Score BIG with this Chocolate Treat

The buttery toffee, rich chocolate, and crunchy nuts create a party-in-your-mouth experience, and will make you beg for a second (or third) piece. Perfect for family gatherings or holiday parties, you’ll score BIG with these treats nestled on your table, or wrapped as gifts.

Sharon's Score Big Bars

1 cup sugar
1 cup butter
¼ cup water
½ cup semisweet chocolate
½ cup chopped pecans
Candy thermometer

In a heavy saucepan, combine the sugar, butter, and water. Set candy thermometer in place. Cook and stir over medium heat until the thermometer reaches 300° F (150° C).

Pour onto ungreased baking tray. Sprinkle with chocolate chips and spread with a knife when melted.
After one minute, pour chopped pecans over mixture. Let stand until set, about 1 hour.

Break into 2 inch pieces. Store in airtight container.

Add this tasty treat to gift baskets or wrap in see-through bags and place on dinner plates to be the hostess with the mostess.

Every cook should test their finished product before serving. Select a piece of candy, or two, then relax in your favorite chair and crack open the first book in my teen psychic mystery series, Lost and Found. You may just find yourself wanting to visit Fairy Falls.

SWEET MORSELS for YOU

Today's special treat is a delicious candy recipe from C.D. Hersh along with a glimpse at their terrific book, Can't Stop the Music.

Almond Candy
1 cup butter or margarine
1¼ cup sugar
¾ cup slivered almonds
6 oz. chocolate chips

Melt butter in 3 qt. pan. Stir in sugar and nuts. Turn heat to high. Cook 5 minutes, stirring rapidly, until the mix turns dark and burps smoke.

Pour into greased 9 x 13 inch pan and spread evenly.

Sprinkle on chocolate chips. When they melt, spread smooth.

Chill and cut into pieces.

She poked her friend. “Stop it, Willow, you’re making a scene.” In spite of her protest, her gaze remained on the dark-haired guy.

He rested his elbows on the rail and stared back at her. The intensity of his expression shot heat into her belly.

“I didn’t say that, just that she shouldn’t pay attention to him.” He flapped a hand at his blond buddy, then tapped his own chest with his thumb several times as if to say, ‘Choose me!’

Does he want me to pay attention to him? Her heart thumped in rhythm to his jabbing thumb.

“Take that one,” Willow whispered. “He’s the real cutie.”

Before she could respond, the crowd pushed them forward. When they reached the other side of the bridge, she looked back, searching for the dark-haired hippie, but the spot where he’d stood was empty.

Just my luck. I see someone who’s intriguing and he disappears.

With a sigh, she continued the trek to the festival grounds.

SAY HAPPY HOLIDAYS with CHOCOLATE

My mother-in-law is a good cook and a wonderful candy maker. She shared this recipe many years ago and it is now a family tradition for the holidays. I hope you enjoy it, too.

CHRISTMAS CANDY

2 pkg. (2 cups) semi sweet chocolate morsels
¾ cup sweetened condensed milk

Using a double boiler, melt chocolate over hot water (not boiling). When melted, remove from heat and add milk.

Variations to Finish
Let mixture cool until you can handle. Shape mixture into ¾ inch balls. Roll in chopped coconut or chopped peanuts or press a walnut in center of the ball.

Or pour mixture into a square pan, score or cut into squares, press an almond into each square before it cools completely.

Another option is icing to decorate the squares like little gift packages.

Once you've finished making the candy snag a few pieces for yourself and nestle in with a fun sweet romance.

One date for every medical test—that’s the deal. Allison, however, gets more than she bargains for. She gets a Groom for Mama.

With a sweep of his hand, Jack spread the photos out on the table in front of Allison and Beverly. “Here’s a few I just grabbed from the database. Any of them interesting?” He studied Allison’s reaction. She didn’t bat an eyelash as she scanned the men’s pictures. Then, without warning, she scooped them up and shoved them at him.

“I told Mama I wasn’t going to do this. It’s a stupid idea.”

“I’ll admit it’s not the ‘some enchanted evening, see a stranger across the room’ romantic way to find a husband, but it’s not totally unacceptable. Several of the couples my company has brought together have married.”

“And lived happily ever after?” she retorted.

“It’s a new company, Allison. I don’t have the stats yet.” He pushed the photos across the table. “Just take a peek. What harm can it do?”

Beverly grabbed the photo of a particularly handsome man. “How about this one? His coloring complements yours. You’d have beautiful children.”

Mama!” Allison snatched the photo away. “We’re not going to discuss my possible, yet unlikely, progeny in front of Jack.”

A flash of Allison kissing this guy flew through his head. He grabbed the photo from her. “He’s not your type anyway.”

“And just how do you know?” she asked.

“I dated you, remember? You ditched me for some suave, corporate hotshot. At least it’s what you said.”
“Allison!” Beverly exclaimed. “You never told me that.”

Allison shot him a fierce scowl. “I’m not comfortable discussing my love life with you, Mama. Besides, what’s done and over with should be buried . . . in the past.” She picked up another photo. “What about him? Or him and him?” She pointed to two nerdy-looking fellows. “They seem corporate.”

Mama leaned over and checked out the pictures Allison had indicated. “Too ugly,” she said. “He’s got to be handsome. Like Jack. I want to know my grandbabies will be as beautiful as you two.”

He grinned. “Thanks for the compliment, but I know I’m not your daughter’s type.” He laid a sheet of paper on the counter. “Fill this out. Then I can get a better idea of what you want in a husband.”

“I don’t want—”

“I know,” he interjected. “But, for your mom’s sake, just pretend you do.”

Sweet and Oh So Cool

This is a perfect sweet for the holidays or any time of the year the desire for something sweet and cool strikes your fancy.

COCONUT ICE

3 breakfast cups (mugs) of white sugar
1 ounce of butter
¾ breakfast cup (mug) of desiccated coconut*
½ breakfast cup (mug) of milk
Pinch of salt
Coloring if wanted

Put all the ingredients, except the coloring, into a saucepan and boil for 10 minutes.

Add coloring.

Beat until thick. This won’t take long, it sets quickly.

Pour into a greased tin and mark into squares.

* Dried coconut may substitute if desiccated isn’t available.
